    During college, I had a roommate from Lebanese heritage. His mom would send us baklava from time to time. She used honey instead of simple syrup. It was awesome. Spanakopita is probably my favorite orders at any party. Now, I have to make it for myself. Haha

    Agree, baklava is not Greek but rather a Turkish dessert. In fact almost all these types of phyllo related dishes have their roots in Turkey or more specifically the Ottoman Empire. They certainly are not Greek and your research team should have done a better job in preparing the background for this segment. Similarly, the savoury dish with spinach is also not a Greek dish but rather also has roots in Turkey and is actually consumed by the entire Balkan region - many other countries such as Macedonia, Croatia and Serbia for example prepare such dishes with phyllo and use a variety of fillings from spinach, feta cheese, meat, etc. This is due to the Ottoman Empire reigning over the region for hundreds of years and leaving some of their influence in these parts.

    Let’s not get into Turkey vs Greek. I also agree this version of baklava is Turkish not the delicious Greek baklava. As well this spanakopita wasn’t Greek either. I’m Greek and I should know. Many recipes are influenced by other cultures but let’s be clear most phyllo recipes are Greek. The pigeon one was defined not Greek nor was the custard pie. She took Americanized recipes and tried to make them Greek which I was greatly offended by. None of these recipes were correct

    @@christina_papou First of all, the comments were to correct the incorrect references in the video. No one is making this into a Turkey vs Greek thing but you. As I commented above, there are many countries who were influenced by the Ottoman Empire given their lengthy reign over the region which included Greece. The comments above are factual and historically correct. Second, re-watch the video because Martha incorrectly makes numerous references to "Greek" dishes. And let's be clear, the phyllo dishes have their origins in Turkish roots not Greek. You can take it and add anything you want in it be it pigeon or something else, but that doesn't mean this all of sudden becomes your dish. Additionally when you refer to this "version of baklava" is not Greek is also a ridiculous comment. Again the dessert is Turkish, you can take it and change out the nuts or slightly change it for example instead of oil use butter, but that doesn't mean all of sudden another culture's traditional food becomes yours. You can't claim it just because you make a slight variation and then slap on a label of Greek and poof it becomes yours! Give credit where its due and leave other people's foods and culture to them.

    Bisteeya is so good! And a great alternative birthday pie for adventurous eaters. :) I also love that nothing gets wasted, e.g. the chicken broth going into the eggs. The almonds are so dangerously addictive, especially with orange blossom water.

    Thank you. The idea of making baklava, or spanakopita had seemed intimidating, but now I think that I will definitely try the spanakopita. I'll probably make mine with some nice feta cheese mixed in. Over the holidays, I made some phyllo wrapped brie wheels to serve and so I have a wee bit of confidence with working with phyllo. :)

    I always make Spanakopita with good quality feta cheese, it gives quite a lot of salt into the dish, so leave the salt out. 😋

    This was not spanakopita. I’m Greek and was taught by my mother to sauté the spinach to wilt. Then draining the remainder of water and letting cool down, add two eggs and feta cheese. I use a block of feta. To lower costs, we use Canadian made feta but Greek is the best. Then add a little milk (1tbsp) if you want to reduce the salty ness. Add a little ground pepper for flavour but no salt cause the cheese has it. We made them into squares or put it in a pan just like Martha but you have to watch a Greek on how to because we love the crust and Martha cut it out. Score it and bake it in the oven until golden brown. Make sure to use butter or Greek olive oil. Whatever your preference. Generally we use olive oil for savoury and butter for sweets. Oh and it’s ok to add herbs. I would use fresh dill.

    It's a Turkish baklava, baklava is Turkish just like yogurt and that spinach borek and soy souse is never used in Turkish or Greek cuisine. Greeks adopted Turkish cuisine during 600 years of living under Ottoman rule. Greeks have their own very good dishes with fish.

    Martha, I’m a “Martha want-to-be” stalker for 30 yrs. Love baking, gardening and crafting everything! You would love my dads vegetarian shaped turkey nut loaf recipe. I have an armature video on homespunfarmhouse. No one to my knowledge has done this. We grew up with him making it every year. He became vegetarian first and passed away several yrs ago.

    It does. It doesn't taste good without it. I grew up with my mom and aunts making homemade phyllo (amazing to watch) and they always used eggs in the spinach filling. If you can find it, use mizithra cheese. People use parmesan in its place, but it has a completely different taste.

    Hey Ms. Stewart, I've been a fan of yours for some time now and that problem that happened only made me like you, even more, a former friend now enemy gave me that unfriendly book about you to read and I did read it, and when I gave it back to them with this comment to them and said that It made me respect you even more and them to no longer associate with them it has been a long time and last I heard of them they aren't in the best of everything oh dear me.

    Rose water should not be added to pistachios and cinnamon, syrup should be added right away after baklava comes out of oven.

    Ugh I’m Greek and very offended. I know people like to bastardize other cultures recipes but this was nuts. Spanakopita isn’t made that way. Whoever makes this way is not Greek. Soy sauce? Might be similar to hortopita which is made with dandelions but spanakopita has feta and eggs. Baklava is also made with almonds or walnuts. Pistachio is made in middle eastern cultures. I make it on special occasions and the rule is hot baklava cold syrup. This was all wrong. Please stick to traditional recipes then making them your own when you’re spreading it around on KZread. I was flabbergasted
