Ingredients:
Eggs 3 pcs.
sugar 80 gr.
A pinch of salt.
Beat until a dense and light mass is formed.
Vegetable oil (odourless) 30ml.
milk 50ml.
flour 80 gr
Cocoa 20g.
baking powder 1 teaspoon.
Sieve and add in two portions.

Sugar 150 g (melt over medium heat).
Butter (well chilled) 70g.
Cream 33-36% 110g.
A pinch of salt.
Let cool down.
mousse:
Dark chocolate 100g.
Milk Chocolate 100g.
Hot cream 33-36% 100g.
Stir smooth and let cool.
milk or water 60 ml.
Instant gelatine 10g.
Leave on for 7-10 minutes.
Very cold cream 33-36% 350g.
whip to tips.
Add melted chocolate and stir.
Melt gelatin (use microwave or steam bath. The temperature should not exceed 60 °C).
Mix well.
Soak the biscuit in milk or cream.
collect cakes.
Refrigerate for 4-6 hours.
Glaze:
Milk Chocolate 150g. Melt.
Unscented vegetable oil 30g.
