I really love that they keep the behind the scenes stuff in.

Lack of experience and creativity is what some of this season’s top chef candidates are showing. Looking at Marcel and Kristen and you can tell they are at a much higher level.

Marcel is really talented. He never got the praise he deserved

I was so excited to see Stephanie! It's such a happy little bookend that Stephanie and Kristen started their Top Chef careers together and now here they are more than a decade later, working together.

I absolutely love it too! Could just watch a whole show with the two of them together (though I love seeing the other alumni too)

So nice to see Marcel again. And such a gentleman about the lash, ha.

Marcel has grown on me post Top Chef Season 2.

I loved him in Season 2 and was so disappointed to see how the other chefs bullied him. I blame the producers-back then it appeared that they egged on (pardon the pun) discord and controversy.

Loving this series! Great to see Marcel.

This was a great collaboration!! Hope more episodes are coming! Huge fan of Marcel! His season was epic!

The eyelash mishap is great! I love the behind the scenes stuff that makes everyone human! Kristen just being herself. I can't imagine Padma doing something this unscripted.

I love you guys I especially love to see Marcel again. Such talent you guys have.

The second one is almost like a soup dumpling but with cheese sauce and a crunchy wrapper. Love it.

I'll miss Padma, especially seeing her passion for eating good food, but I love the move to add Kristen to the host family.🎉 And, nice to see Marcel has grown up and still has a unique perspective and can share interesting details about cooking. 🔪

Excellent episode, and yay Marcel! I always thought he was ahead of his time on TC.

I never enjoyed Marcel more. Glad to see his growth.

Do they post the recipes anywhere?

I use sodium citrate in my lab for immunohistochemistry to reduce the cross linkage between antigens. Obviously, this is used on formalin fixed tissue to bind an antibody to an antigen to view the beautiful histology. Thankfully, it's edible ....the sodium citrate...not the tissue samples :)

Marcel's 2nd croquette uses same concept that Chinese have been utilizing for centuries to make soup dumplings.

Chinese cuisines use Agar Agar and it’s a vegan alternative of using gelatin.

Things can be pushed further.. most soup dumpling are meat based with collagen from the meat and bones. He uses geletin to help it set (the first) second one he makes with cheese basically fried queso dip which is dope.

I was thinking about xiaolongbao as well when I saw what he was doing. It's very cool to see someone using that technique for a different type of food.

I think there's always a bit of luck when it comes to the cheftestants they cast. I'm certain that they're all talented in their kitchens, but you're not always able to transfer that talent into a competition setting. Or from other competitions to Top Chef. A guy like Phillip Frankland Lee is very talented, and killed it on Food Network competitions, but couldn't make it happen on TC. It was if he suddenly developed the cooking yips on the show. Meanwhile, you get a guy like Buddha, who does a tasting menu for something like four tables a night, and he's now a two-time champ. You just never know.

Some didn't like Padma either because they thought she was too stoic. You have to give people a chance to meld into the role. Kristen, you are awesome!

I mean the idea here is for this to be the chill, behind the scenes after-show where they get to decompress and unwind. I majorly disagree with this too because have you seen Kristen's outfits on the regular show? She's always stunning and elegant. Chill, perhaps.
