Namaste, We are Shirish and Pooja
and Welcome to a Tender Cashew Nuts and Aamboli Special Episode of ‪@RedSoilStories‬
It was the week of Holi, whole Maharashtra and Kokan is submerged in the colors of holi. We were also celebrating this festival in our village. Me and Pooja had gone to our Cashew Farm to collect some tender cashew nuts and cashew apples. We collected enough of Tender Cashews and returned home.
Meanwhile Mother and Mami were seating and gossiping. Mami and Pooja cleaned the tender cashew nuts and I prepared cashew apple juice for all of them except Pooja as she can't have it in pregnancy. I prepared lemon juice for her. Later in the evening mother ground the batter for amboli and kept it for fermentation overnight.
Olya Kajuchi Bhaji ( Tender Cashew nuts curry ) is one of the favorite delicacy in this season in Kokan region. It is a delicious curry which can be enjoyed with amboli or bhakri.
Next morning Pooja started preparing Olya Kajuchi Bhaji ( Usal ) while mother went to temple for some holi ritual. After Pooja finished preparing Olya Kajuchi Usal, mother prepared Aamboli and then they all had it for the breakfast.
