fresh food perpared right in front of your eyes is best to eat... there is good comfortable margin in such stalls but it is very hard work that is also there.. though when busy crowds hit you do not realize it at all.

It is cooking oil. When it is burned your food will taste like burnt oil. And it is bad for you.
