Hello everyone! With everything growing so well in the garden, we really want to make sure that our spoils are preserved. With that being said, Roxane wanted to make sure nothing goes to waste. Our family LOVES pickles. With over 10lbs of cucumbers, we wanted to can some awesome dill pickles so we have them for the rest of the year. Thank you all for being here, we appreciate you all!     Love watching your channel. I do have a tip for you, however. You should NEVER store your spices next to the stove. While keeping spices within reach of the stovetop seems convenient, the oils in herbs and spices evaporate when exposed to heat. Losing the oil means losing flavor. Water vapor also rises off the stovetop when you are cooking, another factor that will damage spices

    Those pickles looked so pretty and inviting. One of my favorite pickles is the bread and butter pickles my second favorite is the kosher spear pickles. I grow my own dill weed I grow the mammoth dill weed. To put in my hamburger dill pickles. Also you can dehydrate your tomatoes and grind the into tomato powder then when you want tomato sauce or tomato paste all you have to do is just add some water I just add about 3 to 4 cups of water for the tomato sauce and I add about 4 to 5 TBS. for the tomato paste. For me it's just quicker and easier to dehydrate my tomatoes and grind it down into tomato powder. Then I also just dehydrate my sliced tomatoes are my 1/4 tomatoes and then put them in a bag and then add them to chili or soups.

    Roxanne, put your pointer, bird finger, & ring finger on top of your produce your cutting. Prevents cuts, & it will go faster once you get the hang of it. Hairs looking good & thicker.     You should plant some garlic and onions this fall. Ask locals what the best garlic and onions for your climate and soil. Best way to amend said soil. Go make friends with the best local nursery.     Great blog today. You can also add ice to the pickles for added crispness while soaking in the pickling salt. Garden is really doing well😊

    Great cucumber haul !! Dill is super easy to grow. I have to put mine in pots on my patio and here in N Central Florida they need only a few hours of sun. You’re going to be able to start them from seed in the greenhouse. Great on deviled eggs, egg salad and chicken or tuna salad. The pickles look fabulous!!!

    My mom swore by Ball jars and seals and lids, guess they’ve been around for a hundred years. Love watching you preserve is helpful.

    Roxane, plant some dill and fresh basil for your sauce and any herb you use. I dry mine and use them all winter. Forjars is an excellent brand of lids and rings. The pickles look delicious! Love seeing what's going on in your kitchen.

    Rox, FYI when scraping chopped vegetables off your cutting board into your pan or bowl, don’t use the cutting edge. You are taking some of the sharp edge off.

    If you’re picking a few cucumbers a day, gathering them to can later, cut the blossom ends off right away. (Enzymes in the blossom end make the cucumber go rubbery)Store them in the salt water solution weighted down with a plate in the fridge. They can be in that solution 5-7 days until you’re ready to can. The salt water pulls the excessive moisture out of the cucumber. And YES, I grow dill next to my cucumbers then clip branches to put in my pickles. Yummy & looks beautiful!! You’ll love it!! I planted “bush cucumbers” on the bottom level of my 5 tier Greenstalk this year. Refused to let my husband take up 1/2 a garden bed with WAY too many cucumbers just bc his co-workers love my pickles. This variety makes the perfect whole pickle. Less work! 😂

    Hi Roxanne. Loved the canning video. You know how to do it well and the right way. You're a great teacher. I've always used your tip about growing your own dill. Because most of the time when canning pickles you end up with way more than you use and they make nice gifts to hand out to friends and the fresh dill in the jar makes good presentation. Just tie a little piece of ribbon on the jar and there you go. Also your tip for preparing green beans in chicken stock is the way to go. When cooking green beans I always add some bacon grease, garlic powder, onion powder, salt and pepper and cook 'till tender. I'm an old country boy and been making them that way for years.     Those large Ball jars carry a LOT of product and there are some of us that are only a husband and wife in the home or like myself, single and retired. A large jar like that would probably go off before it was finished for a lot of us. That would be a sad waste... I did look into using smaller glass jars (originally had peanut butter in them I think) and they were a pretty generic design and you could buy them in bulk at some stores for way way less than the Ball jars. BUT there were problems with the lids not sealing. I have to wonder when some bright entrepreneur is going to find out what exact design is the most popular and make lids for them similar to those on the Ball jars that are robust and seal well so that a person can process and can produce into the smaller jars and not open yourself up to wasting sometimes more than half the big jar because once opened, even in a fridge, the open shelf life is NOT TOO LONG. Maybe the Ball company themselves could do it and have a range of 250ml, 500ml, 750ml ant 1 liter jars ALL USING THE SAME LID ON ALL OF THEM but made the same way with the same quality as the larger Ball jar lids. i THINK THAT THESE LIDS WOULD FLY OFF THE SHELVES.

    We don’t weigh our produce. We just went by the bushel. We did everything a bushel at a time. A bushel of pickles. A bushel of green beans or a bushel of tomatoes. In season of course.

    Dill weed can be frozen and used in soups later on. I make a borscht in my instant pot with a pretty big hand full of dill. So good because the instant pot pulls all the flavours together. Very excellent video Roxanne.

    I too love canning. I wonder if you could have used your left over pickle brine and made 1 jar with the green beans. They would be perfect along with onions in the jar. Could be served as a Cold side dish or on a relish tray too. Just an idea! Pickled Green Beans w/ onions. Great Job Rox on all your canning. Your spaghetti in the Instant Pot looked interesting.

    You can use your offbrand lids for jarring up your dehydrated foods and herbs Also you dry dill weed or seed. You save your extra pickle Brian for later use.

    You still should be able to do some succession planning seeds direct for cucumbers. I’m on my second wave of cucumbers. I planted about 13 plants I have I don’t know six of them still producing. I pulled out about six. I picked some yesterday. I’m up to right now, 24 jars of pickles, the majority quart there’s a few pints in each of them so 24 jars I would say and I went out to walk the garden today. We had a good rain so I already see OMG I see actually this really cute cluster of cucumbers 🥒 🥒

    I have some critter eating my tomatoes while they are green so I have not been able to let any of my tomatoes ripen on the vine. ripening them indoors.

    Rox i am 80 years old. I just gor a presto digital canner. I have to say it is the best thing i've ever used. I got the big one. On sale. They are pricey. But your hpuse doesn't heat up. Only 10 munutes of steam. And its all auromatic. It's worth the big bucks truley!

    thats one thing I haven't tried yet is pickles I need to try it...Also if you have a dehydrator you can make tomato powder it's the best thing . If you only need like a table spoon of tomato paste you can make your own....If you try it you have to make sure you dry them longer so they are completely crisp so the powder doesn't clog in the jar I just use a blender to make them into powder .....and let me tell you your house will smell amazing with them drying ...

    I never needed a canning recipe. I had my grandmother and she taught me everything I know. I wish you had one to show you how to do all the shortcuts. The pickles looked beautiful. Great job. I fried up a bunch of okra with green tomatoes in it yesterday and froze it. Have a great day.
