Making somen, a traditional Japanese noodle that has continued for 300 years during the Edo period
Japanese noodle culture has a history of over 300 years. Somen from Kumamoto Prefecture (Nanseki Town) is a traditional hand-rolled somen that has been passed down since the Edo period.
From an early age, I was exposed to my predecessor's (my grandmother's) making somen, learned the manufacturing methods and techniques myself, and got a close look at the young noodle craftsman who produces Nankan somen, which is attracting attention around the world, without the use of any machinery.

これはそうめん好きな私には、一度は食べなければならない麺です。まさに細縄をなう様が美しく、憧れます。 そうめん:室町時代から『索麺(さうめん)』の名で文献にみられました。 『索』には縄をなう意味があり、その製法が名前の由来と思われています。 江戸時代以降、「さう」と「そう」の発音が混同されて『そうめん』ともいわれるようになり、『素麺』の表記が一般化しました
