This time we prepare Sencha green tea, one of the most popular green teas in the world.
For this preparation we use water at 65ºC, with short infusions of 5-10 seconds in a high shiboridashi to allow the leaves to expand better with contact with water.

Hola, Si el sabor es muy amargo, el problema puede residir en los parámetros de infusión, es decir que, la temperatura puede ser muy alta o el tiempo de infusión es muy prolongado. El té verde al ser “tierno” o de baja oxidación tiende a amargarse a temperaturas altas. Yo recomiendo que prepares el té verde con un tiempo de infusión de 20 a 30 segundos, a una temperatura de 65 -75C (suponiendo que la cantidad de agua ronda los 150-200ml por 3 o 4 grs de té). Si la cantidad de agua es mayor, sugiero que el tiempo se ajuste pero no tanto la temperatura. Si tienes alguna pregunta sobre esto, por favor no dudes en responder. ¡Feliz té!
