Making Pineapple Habanero Hot Sauce

Let's make some Grilled Pineapple and Habanero Hot Sauce! This Hawaiian style hot sauce goes great on a wide variety of food. If you liked this video, be sure to subscribe for more! Let's get cooking!
Ingredients list:
8-9 Habaneros (use more or less to adjust spiciness)
1 Pineapple
3-4 sprigs of Cilantro
1 cup white vinegar
1-2 Tbsp of lemon juice
1/2 tsp sea salt

    One thing that I’d suggest adding would be a bit of Xanthan gum. It’ll keep your sauces from separating. I’ve made 6 batches of sauce in the last few weeks from the 19 varieties (106 plants) of hot peppers I grew this year. Some great KZread channels for hot sauce ideas are ATX Hot Sauce & Chilly Chump.     Grounded Roots I’ve recently made a plum sauce using Thai peppers as my heat source. Instead of white vinegar I used red wine vinegar and everyone who tries it has loved it. It has a sweet and sour profile with a decent heat. All the best with your experiments.......I’ve really enjoyed the tinkering with different flavour profiles and heat levels.

    @@cardinhamkilligrew9712 for a full blender full of sauce I only use 1/2 a teaspoon. A bag of the product will last a long time.

    Great video, and the sauce looks amazing. Just one tip, wait till the sauce cools down before measuring the PH to get an accurate reading since the heat changes the PH.

    I made it before I realized you needed vinegar as well so I used the vinegar from my pickle jar, now it just tastes of pickles 😂. I also used a scotch bonnet

    I’m 62 and vegan for 7 years. Just started my raw food journey. I like a fruit bowl for breakfast and I’ve been adding a little honey and hit sauce to give it a kick. This sauce in the video will do just fine. Thank you for this recipe.

    Thank you! If made correctly (bottle sanitized, pH checked, hot filled) then your sauce should last at least 2-3 years in the bottle if not longer

    The FDA requires canned food (hot sauce Falls under this category) to be below 4.6 pH in order to be considered shelf stable. I usually aim for my sauce to be below 4.0 to be on the safe side. I bought my strips on Amazon. Just search "acid ph strips" and you should have a few good options.

    I've never made hot sauce before and I have two pepper plants which are full of peppers: Thai Dragon and Cayenne pepper. Do you think this recipe would work for these kinds of peppers? Also, do you recommend storing this sauce in the refrigerator before opening? Thanks much for making this video! ☺☺☺

    Thanks for watching! Both of the peppers that you are growing have a different flavor profile than habaneros do... However, I think they would still go great in this recipe because they would really bring out the smoky flavor against the pineapple. You'll need to use more peppers than I did to get the same heat level because cayenne and Thai peppers aren't as hot as a habanero is.If you make the sauce with a PH below 4.0, and sanitize your bottles/jars before filling them than this sauce should last just fine outside of the fridge until you open it.

    when you bottle the hot sauce, do you wait for it cool down or just do it while its hot? also since you are putting the bottles in a hot bath does the bottles need to be completely dry ? does water in the bottle affect the shelf life?

    You want to bottle hot sauce when it's still hot, ideally when it still above 180°f in order to kill any remaining bacteria that could be lingering in the bottle. A little bit of water left in the bottle shouldn't make a difference as long as your pH of the sauce was decently low already. The FDA requires a pH of 4.6 or below, but I generally like to shoot for a pH below 4.0 just incase there is any water that could slightly raise my pH.

    @@maxsiva2809 yes, after I hot fill it I immediately place the cap on, and then flip the bottle upside down for 5-10 minutes so that the heat from the sauce can sanitize the cap

    @@GroundedRoots I prefer BlendTec but that's an entirely different arguemtn and just as expensive lol I wanted one so bad but also couldn't afford it. I found one half off at Bed, Bath, and Beyond maybe check there once in a while. It's a weird store but def check out their blender sales.

    Honestly probably not. Salt is salt. There may be a slight flavor difference in regular table salt vs pink Himalayan, but once it's in a sauce you won't notice it

    Yes, these can be considered shelf stable as long as you made sure to pasteurize the sauce (simmering it for 15 minutes) and ensuring that the pH is below 4.0 which will prevent bacteria growth

    Tried similar sauce today but problem si pineapple likes to foam and foam stays in bottles and becomes hard... so I need to skim it while cooking but it's still there even after pushing sauce through strainer.

    Hmmm... I haven't run into this issue yet. Maybe try reducing the heat and simmering on a lower level?

    Hot filling hot sauce woozy bottles is the FDA recommended method way of filling them. They are perfectly shelf stable and will last years if done correctly. A hot water bath on woozy bottles can potentially warp the plastic lids and cause them to spoil a lot faster

    @@GroundedRoots I made a sauce last week on Monday ... Then I started seeing bubbles yesterday and tonight when I opened the bottle all the sauce got spilling like volcano 🌋 I don't know what I did wrong 🥺

    @@zamandubazi28 it sounds like the sauce wasn't properly pasteurized and started fermenting. Simmer your sauce in a saucepan over the stove for about 15 minutes and then fill your bottles while the sauce is hot.

    Maybe I'm not right. But as I can see those peppers are not Habanero chilis. I think there Peach Ghost chili by the shape.

    Dumb question, did you not use water? And how do you know how much vinegar you should be using? I mean, despite the fact vinegar tastes like old dude's balls ...according to my ex lol how do you judge the quantity? and what's the point of simmering hot sauce?

    No, I didn't use water. Some people do like to use water in their sauces, but I chose not to in this one. The ammount of vinegar you use is determined my acidity (pH) of your sauce, and just general flavor. It's really just trial and error until you get something you like

    Real lemon juice the bottle has a stable ph. If you use a fresh lemon the ph throughout the lemon can vary, so it’s a better choice.

    @@GroundedRoots got any tips on when a serrano is ripe? I'm talking green but ripe? Vs before it turns red? I have 12 on one plant with 4 that have been there about a month...maybe more? We error on the more mild side of life...so i wondered if i could pick one before its red?

    @@jujube2407 once the peppers feel firm to the touch, they should be ready. Some people prefer to wait until they turn red though because they have a different flavor
