Hello everyone! In this series of Bordi Ka Safar, I, Sonali Raut will take you to my hometown of Bordi, in Palghar district of Maharashtra and I am going to show you my village, local cuisine, meet the locals of this area, their house tour and of course their recipes!
In this video I am at a local farm from where I will be showing you how is toddy/neera extracted from date palm tree.

The drops attract honey bees which try to drink it. But many get drowned in it instead and this gives it a sweet flavour. The toddy shop owners then add yeast powder in it which starts the actual alcohol/fermenting process. Few days later, it starts forming bubbles on top and frothing which indicates it is ready. Bad quality or old toddy tastes tangy and sour. Fresh tastes sweet.

Thank you for showing the process of collecting neera. I was wondering how was done, since the coconut sugar we buy it just says collect nectar of flowers, and it is obviously wrong, it is the sap of the inflorescence. But in this case this is not a coconut palm. Do you know which palm is it?

It’s completely taddi , you stick chunna inside matka then you can get neera other wise start permitting before morning , after stick chuna to matka it life at lest 10 hr in less than 20 degrees centigrade 🙏
