It only takes roughly 24 hours to pickle cucumbers in a refrigerator and you can have the same affect without buying or making a vacuume chamber. Some recipes call for 6-7 days but honestly 24hr pickling has been a thing since forever.

I can see this at a fried pickle stand: They'd be vacu-pickling whole pickles with grooves cut in them, putting them on a stick, then battering and frying them. Delicious. Fine-tune the container volumes and pickle juice ratios, and you can make the perfect deep-fried pickle~!

More like $200, chamber and pump. You don't need much, a 1/3hp vacuum pump will be just fine to achieve the low pressure needed in a reasonable time. The concern would be contaminating the pump's oil (due to acid and moisture), which should be drained to avoid corroding the pump if it's going to be stored.

What makes it better is that it’s as fresh as can be still but also pickled. It usually takes a long while, so obviously not fresh but safe to eat.

This should totally be done in science classes in school when a teacher has a vacuum chamber for a lesson instead of just making water boil.

Sadly, they can't because of CDC guidelines that all schools are required to follow. It seems really small and inconsequential, but the rules are there for a reason. It can lead to cross contamination, accidents, pranks, and opens the school up to lawsuits. It's a fun idea though.

@@defectivepikachu4582 So you can go onto the CDC website and find out about guidelines for laboratory safety to get the full comprehensive list. Since its rather too extensive to type out. To keep it simple, it is necessary for teachers to maintain a particular standard within their classrooms. Otherwise, they will be considered negligent. Here's a short snipet from the CDC guide on this that sums it up nicely. "The LEGAL DEFINITION of "negligence" is important for every teacher to know. Negligence, as defined by the courts today, is conduct that falls below a standard of care established by law or profession to protect others from an unreasonable risk of harm, or the failure to exercise due care. It should be noted that in the absence of specific laws or local policies, the standard of care expected is set by the profession, e.g., position statements adopted by the National Science Teachers Association (NSTA), the National Association of Biology Teachers (NABT), the American Chemical Society (ACS), or the Council of State Science Supervisors (CSSS). The science teacher has three basic duties relating to the modern concept of negligence: • Duty of instruction. • Duty of supervision. • Duty to properly maintain facilities and equipment. Failure to perform any duty may result in a finding that a teacher and/or administrator within a school system is/are liable for damages and a judgment and award against him/them." Basically, so long as a teacher maintains these particular standards, then they will not be considered legally negligent in the event of an accident. So let's say a student breaks into the chem lab and damages the equipment. That's not on the teacher, that's on the student. But if a teacher pickles a cucumber, that breaks the policy of no food or drink inside a lab. Which means that teacher is then liable for negligence. Since it posed a potential harm to students due to cross contamination and what not. Also it wasn't consumed in an area designated for eating and drinking, like a cafeteria. Which then changes how the insurance may work and cause the school to be penalized An administration will most likely overlook it, but it all depends on the situation and how much it costs the school. I know, it seems ridiculous. Welcome to the adult world! 😂 Oh and one last bit -- no food is actuallt a good thing. See you just see a yummy pickle. But a disgruntled or mentally ill teacher or disturbed kid may see a way as revenge and swapped the brine for urine. That beaker could have been used for hydrocholoric acid and not been properly washed. Maybe the instructor is ill, pricks their finger, and blood gets into the pickles by accident. You get the picture. Think of something stupid to make the situation turn from fun to shitty and it's probably happened. Which is why it's literally easier to just say no food or drink allowed.

@@RC_Engineering This is actually a thing in molecular gastronomy. It's called compressed fruit. You can do it with a ton of fruits to infuse them with flavor from any liquid you put them in and change the texture. Because of that, these "pickles" probably wouldn't have the texture of a normal one.

I can really tell it's a good pickle by his reaction at the end.
That's very clever. You can retain the freshness/crunchiness and get the full pickle flavor fast 👍

No lol, i get the joke but for educational (or dumb if i make a mistake) purposes, im sure that u cant pickle in space because u cant put the air in again (is it called repressurizing? Idk) so basically if u carried a cucumber inside a jar filled with vinegar in space, it will suck the air out the cucumber (as long as the jar is open) but not replace that air with the vinegar, so if u did it i guess u would make airless cucumber 😂 (feel free to disagree and contradict my comment if i said something wrong or if there is a possibility of pickling in space)

@@camaku3084 what i meant is that, how tf do you repressurize in space, without special equipment (like a literal space station) you cant just repressurize in space. Also, if you were to try and get the vinegar and cucumber vacuumed, i think it would float out the jar and be lost (since the jar is open) 😂

Almost all pickle companies and hone picklers do this process, they probably just don't realize it. In canning, once the food is placed in jars they are sealed then heated in a water bath or placed in a pressure cooker. This causes the air inside of the jars to expell out the lids and upon cooling a vacuum is formed inside of the jar. That is why you get a pop when you first open a pickle jar and why there is a pressure tab on the lid.

yeah, pickling is practically doing the same thing as this, it's just a slower process and makes use of bacteria instead of artificial vacuuming
The future is instant pickles, where people drop freeze-dried astronaut cucumbers into brine to make instant-pickles
Best when pre sliced they get a nice glassy crunch its unexplainably amazing.

We call that technique compression in the culinary world. You can compress lots of different fruits and vegetables. I’m pretty sure Thomas Keller’s team invented it or at least was the first to write about it.

@@kaikart123The principle of a vacuum chamber is removing air and water in the cucumber. Thus "compressing" it. So yes, counterintuitively, vacuum chambers do compress things. And, I'd imagine, originally they literally just squeezed some of the water and air out by force. Though that's just an assumption on my part. Friends of mine did that when making pickles themselves.

To be fair, you have to have a very high IQ to understand Pickling. The process is extremely subtle, and without a solid grasp of pickle physics most of the air bubbles will go over a typical viewer's head. There's also a pickle's nihilistic outlook, which is deftly woven into its characterisation - its personal philosophy draws heavily from Picklenaya Volya literature, for instance. The fans understand this stuff; they have the intellectual capacity to truly appreciate the depths of the vinegar, to realize that they're not just funny- they say something deep about LIFE. As a consequence people who dislike pickling truly ARE idiots- of course they wouldn't appreciate, for instance, the humour in a pickle's existencial catchphrase " ... ," which itself is a cryptic reference to Turgenev's Russian epic Pickles and Cucumbers. I'm smirking right now just imagining one of those addlepated simpletons scratching their heads in confusion as the genius of pickling unfolds itself upon their eyeballs. What fools... how I pity them. 😂 And yes by the way, I DO have a pickle tattoo. And no, you cannot see it. It's for the ladies' eyes only- And even they have to demonstrate that they're within 5 IQ points of my own (preferably lower) beforehand.
