Tofu Ricotta (as I said, I eyeballed everything and am devastated, but a great opportunity for you to have fun and listen to your intuition)
1/3 cup olive oil
6 cloves of garlic, minced
5 sage leaves
1 block of firm tofu
1/2-3/4 cup nutritional yeast
1/2tbsp - 1tbsp miso
1 lemon squeezed
lemon zest
fresh thyme
A generous splash of red wine vinegar
Garlic powder + onion powder
Lots of salt and pepper
Around 1/3cup of pistachio nuts
Water to get to the right consistency
Gently fry garlic and sage in olive oil for around 10mins.
Put everything in a food processor, except for pistachio nuts. Blitz until smooth, adding water if necessary.
Add pistachios and pulse a few times.

Italian girl here ☺️if you have to separate tagliatelle by hands means that they are too thick. Be braver Nina and go thinner 🤩 the ones you called tortellini are a sort of tortelloni...the tip for closing them is to wrap the pasta around your index ☺️ you did great 😘
You can actually freeze the portions of pasta and cook it in boiling water straight from the freezer. I don't know if everyone else in Italy does this, but my parents make big batches in one sitting and freeze it, so you have it ready to cook. Plus it cooks in no time! Loved this video! ❤️

I love this video so much! ❤️ also, a good tip when making gnocchi: bake the potatoes in the oven rather than boiling them, that way you will need less flour when making the gnocchi dough

I make a really simple ravioli without a pasta maker I just roll it out and it’s a thick doughy ravioli baked in the oven with pasta sauce
