Oh my goodness...these came out incredible. As usual with these guys, just follow the detailed instruction. Wish I could post a picture.
I don’t know if anyone remembers this or not but BK used to have the most amazing chicken fingers that they called chicken tenders and it was their answer to chicken McNuggets. They came out in the early 90’s and they were soooo good, savory, flavorful, herbaceous, and just plain delicious but they definitely did not look like nuggets nor chicken tenders. They were their own weird, overgrown Cheeto-like shape. They came in their own special packaging that was the first time I had ever seen any fast food chain make a special holder for the little sauce tubs on the side. Everything about them was new, innovative and they tasted just so much better than any other chicken nugget/tender/finger/strip product on the market. They didn’t last all that long and they were soon replaced by the driest nuggets known to man, which they serve now, and never returned to the market. I just wish they would bring them back even for a limited run. And no, the chicken fries don’t even come close to what their tenders tasted like. If ChefSteps could recreate that classic product, my mind would be blown!
I started keeping kasher a couple of years ago, and the whole salt changes the myosin thing is so real. Kasher meats are heavily salted for 15min right after slaughtered to draw out blood (that's where "kosher salt" comes from, the shape of the granules is perfect for this), then repeatedly washed in fresh water to remove the salt. As a side effect, they're so much more tender, and slightly bouncier than non-kasher meats. It's more noticeable in chicken than beef or lamb. It's a really cool texture, and I actually prefer it.

How interesting! I hadn't thought of that texture change before with Kosher meats. I wonder if that's why the Halal chicken at my favorite kebab shop has such a nice texture, too.
Combine this with the chicken fried turkey that uses white meat Ive got everything I’ve ever needed to make thanksgiving the most delicious and most unhealthy this year.

Could you freeze after the first fry like you do with French fries. Then you can all the hard work ahead of time

Absolutely! We have that option built into the recipe. Cool the nuggets completely on a wire rack after the first fry, then transfer to a ziplock-style freezer bag, and freeze for up to 3 months. To finish, fry directly from frozen at 350 °F / 177 °C until golden brown and crispy, 5 to 7 minutes. Note: Second fry at a lower temp from frozen, compared to the 375 °F / 191 °C for the second fry if going into second fry right away, so that the exterior doesn't get too dark before internal has time to come up to serving temp. Alternatively, air-fry nuggets at 400 °F / 204 °C for 13 to 16 minutes.

Actually, McDonald’s went to the Chinese American community because of the popularity of general chicken, for the batter and the Chinese basically told them to !!!! off. That’s when the batter was reverse engineered.

There’s a link to the recipe, but you neglected to tell us it’ll cost 69.00 a year for a pass to access it. I found this out after I created an account on your website. (As advised) When the “Pay wall” still prevented me from seeing the recipe, I was advised that I needed to purchase a “Studio Pass” membership for 69.00/yr in order to actually see the recipe, but not before they had me clear my cache and open a trouble ticket. Wish you had been more transparent. If there’s a fee to access certain recipes, say so up front.
