If you put a sheet pan in the oven on the rack below where the cast iron pan is, that should help. I will also wrap the dough which is hot in a towel until it dries. That will soften the crust.

I've never tried this. I'll have to try the sheet pan on the lower rack next time I make bread!

I do really like my Sourdough Goldie! I use it more than I thought I would. it just makes the the process a lot faster, but also you need to make sure you keep an eye on it because it can cause your starter to REALLY expand a bit too much. At least you know it's healthy! :)

Hi! I’m so sorry I’ve been traveling. I only feed my starter 50-100g all-purpose flour and 50-100g water (1:1 ratio) whenever I’m getting ready to bake! Ie. I haven’t baked in 2 weeks and won’t be making bread until next weekend so I’ll feed my starter before I’m planning on baking! I hope this helps!!! :)
I use my iron Dutch oven also but my bottom crust is like concrete. What do you think I'm doing wrong?

You might be baking it for too long. I make sure the bottom has plenty of flour so it's not sticky and doesn't overtake. I would try decreasing the temperature! When I bake, I keep the lid on for 18 min at 500 degrees F, and then take the lid off and bake for 18 min at 450 degrees F and I've found that to be perfect for me! I hope this helps!

You can sprinkle your bread before putting it in the oven or throw some ice cube😢in a bottom tray that will give you a nice crackly crust but soft bread ❤
Learning gram conversions, did you use 500g/ 4 cups of flour?

Thanks for getting back . Made the starter with quarter all purpose flour with same amount cold water ,in a jar stir throughly ,cover with cheese cloth , feed after 2nd day as before , every day discarding and repeating . Left on the kitchen bench . Do I have have to wait for seven days ? Before using not many bubbles .I'm lost 😕

@@suesparkledimndart4309warm water will help speed it along, also some whole wheat or other grain will help, but not required. It will likely take a week

Hi , the sourdough starter has doubled in size I was jumping up and down with excitement 😄 never worked before yippie
