Actually it's called spatchcocking. When you take out the backbone of a bird & press it flat. Butterflying it is when you cut it length wise down the middle.

Honestly, putting a brown paper bag in your microwave is fine as long as you don't let it burn. I used a brown paper bag to pop popcorn once (it was loose kernels like you would use for a popcorn machine.) You don't even need oil but don't try and reuse the bag
