Magpie Geese with Hector HK Champion Trainer - Darwin NT

While travelling to Darwin for work, I had the opportunity to accompany Hector (from Chile) on a morning shoot to a mango farm with too many magpie geese.
Check out from 8 mins onwards to see how Hector quickly processes the birds - which he put on a rotisserie later that night.

    Great to see you back, what did they taste like?,how did he cook them?, all the best for the new year, hope to get back to Vic for next year.

    Hey mate - he seasoned it Chilean style and then slow cooked over the rotisserie. There were about a dozen of us who tucked into it and the only complaints was we should have cooked more!

    I have always wondered how you would skin a bird without making a mess of it having to pick a hole bunch of feathers. Is that part of the farmers assist program Jamie?

    He certainly had the knack for a quick and clean dressing, in 30 deg 100% humidity! Hector has a lot of contacts with private land owners that he trains. Not sure about the farmer assist program but Magpie geese hunting is regulated by NT Parks & Wildlife nt.gov.au/leisure/hunting-and-shooting/magpie-geese-and-waterfowl/magpie-geese-and-waterfowl-hunting-permits

    So good bro! I worked up there for 12mths and had the pleasure of shooting and eating them with some indigenous locals. He had an old rusty Winchester single shot that ejected once you pulled the trigger. Bit dodgy but did the trick. We hot plucked them and splayed them on a wire grill over hot coals, heaps of salt. We ate the heart,liver,giblets and brain. Great experience 👌🏽

    That looked like a lot of fun Jamie and Hector certainly knows his stuff I'll bet they tasted good but not as good as a Sambar backstrap .I had the good fortune to meet up with an old school friend of mine who I hunted with many years ago just before Christmas and he gave me about a kilo of Sambar snags they tasted fantastic in fact I ate the lot in a couple of days.I hope you can get back over here for a Sambar hunt this year mate there should be plenty around .Anyway Happy New Year to you and your Family mate.

    HNY to you too Rod - yeah the geese tasted great with the combo of seasoning and flame on the spit. It had been so long since we caught up that we partied into the early hours and woke up late for our buffalo and pig hunt the next morning!!! I’m itchy to get over for a Sambar hunt!

    No it was just for personal consumption and shared with Hector's family and friends. He vac seals and freezes the meat.

    Hector certainly made it look easy - personally I’d never broken down a goose like that before. Although our attempts were nowhere near as copy book as Hector!! Wish I hadn’t drunk so much later that night when most of the birds were on the rotisserie - I should have got the camera out to show the post field prep

    Nah hector is a mate from Darwin who used to train me (google hk champion trainers) but yes he organised it all and put in a show 🤣 I took hector to Nz for a red stag backpack hunt in 2014 and he shot his first stag - what goes around comes around - good times
