Macaroni Salad is a classic, refreshing dish perfect for picnics, barbecues, and potlucks. It's a creamy and tangy salad with a delightful mix of textures and flavours.
Macaroni Salad is a colorful and delicious cold pasta salad. It starts with perfectly cooked elbow macaroni, then tossed in a creamy dressing made from a combination of mayonnaise and Greek yogurt for a smooth, tangy base. This dressing is sweetened slightly with white sugar and brightened with distilled white vinegar and apple cider vinegar or lemon juice. Dijon mustard adds a hint of sharpness, while salt and ground black pepper balance the flavours.
Thanks to an array of fresh vegetables, the salad is vibrant and crunchy. Chopped onion adds a bit of sharpness, while celery and green bell pepper contribute a satisfying crunch. Grated carrot brings a touch of sweetness and color, and diced cucumbers add a refreshing, cool bite. Drained pimento peppers (or red bell pepper) offer a mild sweetness and a beautiful red hue.
You can mix in chopped fresh herbs like parsley, dill, and chives for extra flavor and texture. These add a bright, herby note. Chopped hard-boiled eggs can provide richness and additional protein, while shredded cheddar cheese introduces a creamy, savory element. Ingredients
- 4 cups uncooked elbow macaroni
- 1/2 cup mayonnaise
- 1/2 cup Greek yogurt
- 1/4 cup distilled white vinegar
- 1 tbsp apple cider vinegar or lemon juice
- 1/2 cup white sugar
- 1 1/2 tbsp Dijon mustard
- 1 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 large onion, chopped
- 2 stalks celery, chopped
- 1 green bell pepper, seeded and chopped
- 1 grated carrot
- 2 large cucumbers, small to medium diced
- 2 small jars or 1 large jar of pimento peppers, drained _ I used red bell pepper
- 2 tbsp chopped fresh parsley (optional)
- 2 tbsp chopped fresh dill (optional)
- 2 tbsp chopped fresh chives (optional)
- 2 hard-boiled eggs, chopped (optional)
- 1/2 cup shredded cheddar cheese (optional)
- 1/2 cup cooked bacon bits (optional)

    Enjoyed reading the comments of what people put in their versions. I grew up with all green onions, diced egg and frozen peas plus peppers and celery. Sliced egg on top with the obligatory paprika sprinkle. No sugar and we used Miracle Whip. Now if I use mayo it has to be Duke's plus sour cream. Sometimes dill pickle relish or chopped with some brine.

    Nice; one of my favorite summer dishes and a great way to use up leftover veg. I prepare it in a similar way, but I'll add anything I have - chopped broccoli, kale, spinach, zucchini (courgette); blanched green beans or peas from the freezer, a can of rinsed black beans or chick peas, halved cherry tomatoes, chopped scallions, shallots or scapes instead of white onion - I toss in whatever's in the kitchen. When I'm especially lazy I'll use a cheap bottle of Italian or Greek salad dressing instead of homemade, it still tastes great. If I'm making the pasta salad the main dish I'll up the protein with a generous dollup of greek yogurt, a cup of shredded cheddar cheese and/or diced hard-boiled eggs.

    I grew up with macaroni,mayo, tuna fish ,celery seed onion and celery. Lived it even though I hate fish, . But all grown and have always added as many and varied veggies as I could and no fish ugh

    When you chop the egg and mix it in, the yolk becomes part of the dressing. I never use sugar, however, I usually use Miracle Whip instead of Mayo so that is slightly sweeter. Mustard is essential. I also add some dill pickle juice instead of vinegar. I love your combo of vegetables. For people who hate raw onion, I sometimes substitute red radish sliced in rounds. They are easily picked out but still give a satisfying bite. Onion powder can go in the dressing for the taste.

    I do agree that adding chopped veggies to a pasta salad makes a difference. I grew up eating macaroni salad with Miracle Whip and chopped sweet pickles and macaroni and nothing else. I didn't know it could be better. Nice channel.

    This is a very popular American dish,pretty much made the same as this.As you said we can use any pasta,I like the rotini, something about macaroni I just don’t like,nor do I like orzo.A friend of mine,a very good cook made a cauliflower salad with finely chopped dried beef,in the same sort of dressing you made,it was very good.For me I like broccoli in pasta salads,and a bit of bacon,and maybe a teaspoon of sugar,so easy to adapt your lovely recipe,so thank you Rik.😊

    Looks like an awesome macaroni salad. Mac Salad is the ultimate "make it your way" recipe... so much so that you may never make it the same twice. :) I don't know if it really changes the flavor at all but I also like to toss in some whole celery seed.     Beautiful, colorful bowl of confetti vegetables! Yogurt is a great addition I will try. I like to use seasoned rice vinegar and a little sugar, too! Could add peas, corn, edamame and whatever strikes your fancy from the freezer! Looks delicious and great ideas, as always!

    This is such an awesome recipe because you can take things out, add things in. Some days you'd want all that bacon and egg, but then another day, you might leave them out. Same with adding grated carrots, or a bit of beetroot at the end

    I absolutely love a ‘sling it all in’ pasta salad. What I usually add is a sweet diced eating apple and/or a handful of sultanas, rather than adding sugar to the dressing, plus some roughly chopped walnuts/almonds/cashews. I’ve added fresh orange segments, chicken and prawns too in the past and it all hangs together so well if the dressing is good. A big mixing bowl full is supposed to last me for at least a couple of days, but it never does. So glad I subscribed. I’m really enjoying your videos. 😊

    Wifey likes pasta. Will have to swap the peppers out for her mind, will probably add broccoli instead and swap and change a few bits but I can see a few brownie points on the horizon :).     Love macaroni salad. In my family we make it allways as a food in summer adding in the mix smoked salmon or any smoked meat what one likes. Sauce is same mix what u did, putting there onion, garlic, salt, black pepper and herbs. Great dish😍❤️👋🇫🇮

    Pretty close to the way I make it. I usually use Maille Mustard with mustard seed and if there isn’t any bacon around, I finely cube reduced salt Spam and mix that in before letting it sit in the fridge. I also use some chopped dill weed to add the sour with a bit less vinegar and I hate to say it; but, I am an absolute freak for Balsamic vinegar. If there is any cans of Leisure Early Green peas; it hops out of the can and into the mix as well. And … I totally agree with your assessment and warning about how to dice onions. I am sure fingers are not part of any recipe so they can save that for Hannibal Lector’s cookbook. I’ve never seen anything so stupid. Thanks for the show. I am so hooked on it.

    Excellent! I love macaroni salad! But sadly, ours most often gets limited to macaroni, cucumber, and hardboiled egg. 😞 I really like potato salad as well, and often have it for breakfast. Here's the recipe for my favorite salad dressing - normally for the potato salad, but it works for mac too - 2 eggs well beaten 1/2 cup sugar 2 heaping Tbsp flour 1 heaping Tsp dry mustard dash of salt 1/2 cup milk 1/2 cup cider vinegar 1 small pat of butter (1/2 Tbsp Stir together in a double boiler until thick Simple, but delicious!

    You can't go wrong with any version of noodle salad, it's just good. Except raw celery, which make me gag, cooked is ok LOL, I use celery seed :) Sky's the limit on ingredients. It's better the next day :) The one ingredient that takes this to the moon is the cucumber in my opinion. Give me some fried chicken or anything bbq and a piece of watermelon and welcome to Summer :). This is a good version, thanks Rik. Side note: The cross cut maneuver when dicing onions never made any sense to me either.

    My favorite pasta salad: bow tie pasta, halved cherry or grape tomatoes, chopped red onion, sliced black olives, chopped fresh basil, and green peas. Raw is fine. Toss with EVOO, wine vinegar, minced garlic, Dijon, salt and pepper.

    As mentioned at the beginning of the film - there are thousands of variants! From me these general remarks: a) I would always rather take "small" noodles(as used here), b) for peppers I prefer pointed peppers (have the best aroma for me), c) a spoon is suitable for removing the seeds of a cucumber. 👍

    Here in Texas our macaroni salad and potato salad, made basically the same, looks a bit different than yours. Yours is quite a bit more complicated with more ingredients than we use. Yours looks really good though. Your mayonaise looks different too. Ours is thicker and whiter and we don’t use yogurt or vinegar. My recipe is macaroni, mayo and Miracle Whip (mayo-like salad dressing), onions, green onions, celery, yellow mustard, sweet pickle relish, salt and black pepper, and sometimes boiled eggs. I agree with your onion cutting! I also cut my bell peppers the same way. The reason I don’t put bell pepper in my salads is because my family doesn’t like raw bell pepper or cucumber for that matter. But I cook like my Mother did and she never put bell pepper, cucumber, carrots or bacon in our cold salads. I will be making my version of macaroni salad tomorrow for our 4th Of July Holiday, along with baked beans and a juicy ribeye steak!

    Absolutely amazing! 🤩😍 I love the idea to put bacon in, I've never done that before. And grated cheddar sounds better than cubed Gouda as well. The ½ cup of sugar is a bit much for me. One to 1½ tablespoon of sugar is more than enough for my taste. And I might use Pennsylvania Dutch pickled eggs or balsamico pickled eggs. I'm getting hungry just thinking about it.

    Almost exactly like mine, but I don't use boiled egg and I mix in chopped bacon. I add sauce to the pasta right after draining, while still hot. That way the pasta absorbs more.
