Mam, I love your videos.my grandma also follow same process and same measurements. Only one simple tip she mixes all dry ingredients separately ( chilly powder,salt, mustard powder and methi powder all together) and then mix that to mango peices and garlic cloves / crushed garlic and methi seeds. She says it would be easy to mix them well.

I followed this procedure but opened on 3rd day to mix thoroughly but i noticed mold formed on it and entire pickle was gone waste,U could not understand where it was gone wrong.Please suggest me

1. Right selection of mango 2.ingredients selection 3.everything should be dry in sunlight for 3/4th day 4.keeping vessels also should be dry in sun light 5. Measurements should be in right quantities especially salt 6.oil should be very fresh 7. Garlic should be new harvest 8.finally hygiene. Hands and surrounding shouldn’t wet. May be any one of the above reasons cause mold. Tender mango also catches mold.

Mango cute 8 portions (steel vessel measuring) 1 portion red chilli powder 1 portion freshly grounded small mustard seeds 1 portion grounded rock salt For 10 medium mangoes 100 grams fenugreek seeds (methi seeds finely roasted) fine powder Garlic for 10 mangoes 750 grams peeled Garlic 250 grams peeled and crushed If you want you can add 250 grams more also Freshly extracted gingelly (til) (husked) (not black til) oil 1.5 - 2 kgs. Oil should be 3 inches above the pickle. Remaining as I shown in the video you can follow. Thanks. 🙏

Video correct gaa choodandi Asha garu. Nenu mukkalu enni vesaanu lekkapettandi. 16 ginnelu mukkalu vesaanu. 8 gunnela mukkalaku 1:1:1 salt, kaaram, aavapindi ani cheppaanu. So 16 ginnela mukkalaku 2:2:2 vesaanu.

Yes andi. Depends oil. If you keep oil on the top of the pickle it will be in dark red colour for one year. If you finish oil it will fade out. You can keep in jadi but my suggestion is keep in fridge for long lasting colour and taste. 🙏❤️😊

Sorry ma Sirisha. With global warming all seasons were distributed and mango trees flowering delayed by 3 months. Usually mango flowers start from Nov-Dec. Now flowering in March and April. We waited till May for mango fully grow. Sometimes June July there we’re ready before. Please understand the situation ma. 🙏❤️😊

No andi. Because mango cuts release water from it with the touch of salt. And air comes out from the gaps of mango cuts. All these actions makes air bubbles. When I put the spoon immediately air go off and oil comes out. That is not the sign of less salt. From last 25 years I’m doing same process. Not even one time spoiled. Because I’m doing very hygiene conditions.

Video marokkasaari choodandi. I shown three times. While drying in the sun, adding in the mixey cup and adding to the mango pieces. First I added oil, turmeric then I added garlic. May be you dragged the video. Thanks much for your time andi. ❤️🙏😄
