Lunch on the farm - Large Family

Come along with me as I show you our lunches for the week. I must say, lunch is my most dreaded meal, simply because I don't have the same inspiration as I do for dinner. As much as I would love to serve sandwiches every day, I know I need to get some variety in here.
Our lunches were:
Sesame chicken, Pasta and meat sauce, tuna salad and tortilla chips, nachos with taco meat & cheese, ramen noodles
Sesame Chicken
-3 lbs boneless skinless chicken breasts cut into 1 inch pieces
-4 eggs beaten
-salt & pepper to taste
-1 cup all purpose flour
-1 cup cornstarch or arrowroot powder
-oil for frying(I use coconut oil or pork lard)
SAUCE:
-1 tsp garlic powder
-1/2 cup honey
-1/2 soy sauce (or liquid aminos)
- 4 TB ketchup
-6 TB brown sugar
-4 TB rice vinegar
-2 TB toasted sesame oil(I use pork lard)
-4 TB cornstarch or arrowroot powder
-4 TB sesame seeds
-4 TB sliced green onions
1. Place eggs, salt & pepper in a bowl. Stir to combine
2. Place flour and ½ cup of cornstarch in a shallow bowl or plate. Stir to combine.
3. Dip each piece of chicken into the egg mixture, then into the flour. Repeat the process with all the chicken.
4. Heat 3 inches of oil in a deep pan to 350* F
5. Add 7-8 pieces of chicken to the pan. Cook for 5 minutes or until crispy and golden brown. Repeat the process with all the chicken.
6. Drain chicken on paper towels
7. While the chicken is cooking, combine all the sauce ingredients in a bowl and stir well.
8. Add the sauce mixture to a saucepan and bring to a simmer. Heat for 3-4 minutes.
9. Add the crispy chicken to the sauce and toss to coat. Sprinkle with sesame seeds and green onions.

    Oh this fake vid I did Jesus didn't have fake cute children in it too bad, so when are we rid of everything everyone fake humans only keep a few obviously but?     You know,in Greece we cook once a day,lunch which is the most important meal especially for children after school and the same we eat for dinner, sometimes we have the same food 2 days in a row,lunch and dinner.😊😊

    I was giggling when I saw the little one with you on the tractor etc... I remember one little thing happened to us. We had baby pigs that were born.. and the momma rejected them. So I was bottle feeding them and taking them with me when I had to go clean houses... As I also homeschooled my children.. I was a single mom.. anyway we had little kennels that we would put in the truck and one or two of the kids would stay on the truck and babysit the pigs as I worked and they did their school work..next house two others would go in with me and so on.. well on one event I had to stop and get gas. I had this baby pig wrapped up in a blanket I get out and go to pay for gas and this woman yells out it's a pig.. she tells me I thought you had a baby but it's a pig... Lol yep I live in a small town and everyone knew I had a pig in a blanket... The kids now grown adults still laugh at this today

    Might I make a suggestion……I raised six hungry kiddos and two were boys so I always had a large pot or crockpot of homemade soup going for filling bellies. Now I have a 12 quart instant pot I love….I cook two chickens or a big roast or lots of tomato sauce to make into meals….yesterday I cook 8 lbs of hamburger in it on slow cook while I cleaned…then bagged it up to have in freezer for later meals……ready to go meals are my go to now even with just two of us. We did fire wood yesterday and I had spaghetti sauce slow cooking in the instant pot. It’s so nice to use this pot even with frozen meat whalla meal in a short time. Soon I’ll be outside a lot and I’ve been prepping go to meals one day for the week. Making recipes I can turn into two meals and be different by adding noodles or rice for the second if there’s not a lot…… You probably already do all of this…..with the older children now helping you you are lucky…… That baby lamb needs a pal to be his friend and maybe he’ll stay in his paddock…….he wants love …so cute….doesn’t take critters long to find an escape….🤣

    Thank you for the video. It was very well done and I enjoyed it. Please teach your daughter who made the sesame chicken how to do th one hand wet, one hand dry, breading technique! It is painful to watch someone with such goopy hands to bread anything, when there is such an easy alternative!

    How do you keep your glass milk jars clean between usage. We have gotten some fresh milk from our local farmers and then have decided to utilize the jars which are exactly the same as the ones you use for your milk storage, to put clean filtered drinking water in. However, we have come upon the question of how to keep mold or algae out of the jars. So, that is why I am curious of how you go about keeping your glass jars clean. Thank you for your reply. And thank you for sharing how you and your family prepare food and lunches and grain, etc.

    As soon as we use the last of the milk we immediately wash it out with hot soapy water. If that hasn’t been done I’ll put it in the sink and fill the bottle up with hot soapy water to soak. Then I take a bottle brush and clean it out well with that.

    And where can you get a bottle brush small enough to fit inside the mouth of the jar and long enough to clean the entire inside of the jar? I've looked in various places for one. Thank you.

    Yes, I tried putting him with last year’s lamb but neither of them were happy 🤣 We are expecting new lambs to be born any day now so I’m hoping once he has some his age he will gravitate towards them more.

    Most of it has to do with the genetically modified corn used in corn starch. I’m sure you can find nonGMO cornstarch.
