Low Carb Miracle Biscuits! The BEST lc biscuit!

You will never know this biscuits are low carb! Only one egg in the entire recipe and roughly 1 net carb per biscuit. These have a flour like mouth feel and are simply amazing. Grab some oat fiber, mozzarella cheese, and cream cheese and let's get to rolling in the dough!
Stay tuned. These make excellent cinnamon rolls AND copycat orange danish rolls!
For the biscuits
1/3 cup almond flour
1/3 cup plus 2 tablespoons oat FIBER
1 tablespoon Sukrin: 1 granulated sweetener
1/2 tsp salt
1 tsp baking powder
1 egg
1 cup shredded mozzarella cheese
2 ounces cream cheese
3 tablespoons butter
Mix dry ingredients and the egg and set aside. Melt mozzarella cheese and cream cheese on reduced power in the microwave or melt together on low heat on the stove top. Warm until the cream cheese and mozzarella are well mixed. Add butter to mixture to melt it. Add cheese mixture to the dry mix and combine. You will need to use your hands to knead and combine the cheese and other ingredients.
To shape the biscuits you can use parchment paper and roll it out or shape it into biscuits by hand (what I do). The recipe makes 12 biscuits.
Bake at 330 degrees for about 12 minutes. Biscuits will be lightly browned on top and bottom. Enjoy!

    hint...i own a bakery...i have found that keto "bread" items like this mix fast and thoroughly in a food processor. just pulse a couple times till combined. takes seconds, mixes well, keeps them tender as they arent overhandled. I do this with bagels..you can easily shape as the mozz is still melted!! thanks for the recipe these are great!

    Holly, are you saying that you just pulse all the ingredients in the food processor and bake them, without melting the cheeses? I have used the food processor-it is much more efficient, but have always melted the cheese. It would be a lot easier though, if you can do this without the melting…

    Oat fiber is a part of the husk that surrounds the oat grain, if I'm not mistaken. Here is a video that explains the difference: fruitofhands.blogspot.com/2013/07/oat-fiber.html You can purchase it through Netrition.com or I think Amazon. :)

    Although I make 5 biscuits instead of 12 I tried these in the air fryer 310 for 11 minutes. The Airfryer adds a texture that harder and held up better making a breakfast sandwich. I appreciate all your recipes!! Thanks! I do wish you would add links to your products you use. It took a couple tries with different companies of oat fiber before I got them to turn out.

    @@madisonraffel6353 I used Trim Healthy Mama blend and mine came out nicely. I'd just recommend cutting the extra salt and using unsalted butter... mine were super salty and I had to cook them longer but the texture was amazing and would be great as a sandwich or with gravy.

    The brand name ingredients make the difference! I have made this recipe three times and each time they came out dense with a heavy wheat flavor. Now that's not a bad thing, if you want a dense wheat biscuit. I did not. I wanted the light fluffy crumbly biscuit I saw in your video. So I started again....checking every ingredient. Bought your book and looked at your recommended ingredients. The brand-name ingredients make the difference. Honeyville almond flour, life source foods LLC oats fiber and Kerygold butter is what I used this final time. The results? Delicious! Thank you so much Kristi for your time and effort in testing and sharing these recipes. You are a doll! Wish I could see you at the keto convention in Texas this fall. I know those who hear you will be blessed. Thank you again!

    I made your biscuits, but I added 1 teaspoon of ACV 1 teaspoon of Nutritional yeast 1 teaspoon of corn starch and an extra tablespoon of oat fiber and substituted stevia for sukrin. They were so tasty I couldn't stop eating them .Especially good with no sugar added Smuckers Blackberry preserves. The texture and the tastes wasn't exactly like wheat biscuits, but delicious just the same and by far the best tasting non wheat bread type anything I've ever tasted . I've think we're on to something. Thinks for the idea .

    They also make great dumplings in chicken soup/ I make the biscuits first then drop them into the soup/ I use a small amount of gluc to thicken broth!

    i used everything but the oat fiber and replaced that with powder egg : its an awesome combo! ha, kristie , i seriously think we could do noodles out of this dough: what cha think?By just adding extra cheese and egg.

    I dont have oat fiber so I just increased the cheese and used powder eggs and it has the same texture as real pasta! I never really measure when i make breads or pastas : I have to feel the texture to know its right: this works: I have often followed peoples recipes using coconut flour , and I find it is really useless, unless you add psyllium husk and lots of eggs : the powder eggs actually work so much better for any bread / pasta products: by the way , that butter cream frosting you made is excellent too!!!

    I've just found you and your wonderful recipes! This is the first recipe of yours I've made and they came out wonderful! Thou!e texture and flavor are better than anything I've had yet. I was making carbquick biscuits and these are better and I feel better knowing exactly what I'm putting into the mix. You never know with the prepackaged kind.     Thank you Kristie!! The first time I made them was a failure (microwave idk) but the second time around I melted the mozz and cream cheese on very low heat in nonstick sauce pan. Added the dry mix (egg was kind of lumpy) and then mixed very well with gloved hands sprayed with avocado oil! Baked for about 14 mins (made larger biscuits) and they were delicious warm with butter. It satisfied the bread/biscuit craving. Reminded me of Brazilian cheese bread. Now I want to make a keto jam for them.

    I just popped these into the oven, turned around and there on the counter was the EGG I forgot to add! Doh! I quickly tossed the biscuits back into the bowl, added the egg, which seemed to do just fine (didn't scramble!), and now they are back in the oven. I rolled mine into logs and sliced them into 12 biscuits. It seemed easier than rolling them individually. Adding the egg made a huge difference in the size! I only got 8 small biscuits without egg (Duh) but I was able to get 12 small biscuits once I corrected my error. Thanks for the recipe!

    I made these tonight and they were so good! I might have to find a different brand of Oat fiber because my has a pretty bold "raw" taste. But the texture was TOP NOTCH!

    +cap32682 Where did you find oat fiber? I'm in Canada and I can't find it anywhere. Even on amazon.com. So frustrating

    Well I have tried a lot of your recipes and I love them all but this one is really the best. I have tried a lot of the recipes on the web for biscuit but did not like any of them. These are delicious. Thanks so so much. Was wondering if u have any other recipes that calls for the oat fibre.
