Prep Time: 15 minutes
Cook Time: 40 minutes
Ingredients
This is a standard recipe. It's best to add any additional vegetables you love. You can modify and change up the vegetables. Eat this soup to help detox and lose weight for breakfast, lunch, and dinner. After a few days you can add some protein to the soup if you desire.
2 1/2 Tbsp olive oil
1 1/2 cups chopped yellow onion (1 medium)
2 cups peeled and chopped carrots (about 4)
1 1/4 cups chopped celery (about 3)
4 cloves garlic , minced
4 (14.5 oz) cans low-sodium chicken broth or vegetable broth ( I use mostly water, you can dilute it.)
2 (14.5 oz) cans diced tomatoes (undrained)
3 cups peeled and 1/2-inch thick diced potatoes (from about 3 medium)
1/3 cup chopped fresh parsley
2 bay leaves
1/2 tsp dried thyme
Salt and freshly ground black pepper
1 1/2 cups chopped frozen or fresh green beans
1 1/4 cups frozen or fresh corn
1 cup frozen or fresh peas
Instructions
Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery and saute 3 - 4 minutes then add garlic and saute 30 seconds longer. Pour in broth (if you want lesser ratio of broth use 3 cans then only 3/4 cup of the 4th can) and add tomatoes, potatoes, parsley, bay leaves, thyme and season with salt and pepper to taste (if you want a really flavorful soup you can add in more dried herbs and other vegetables to your desire, I prefer to let the flavors of the vegetables shine though and not overdue it). Bring to a boil, then add green beans, reduce heat to medium-low, cover and simmer until potatoes are tender, about 20 - 30 minutes, then add corn and peas and cook 5 minutes longer. Serve warm.

    back when i was a kid my mom would always make a huge pot of veggie soup and she ate only the soup and raw veggies and tons of grapefruit and within a week i always noticed how happy and glowing and beautiful she was inside and out. You are so right and I cant believe I havent thought about this! mom sometimes would put chicken or beef broth in because she wasnt eating meat. And she had 2 poached eggs and 15 min of sun hangin out the wash. Boy she was a beautiful lady.

    We called ours atew n I live ir but purs had potatoes.beef ir g beef celery cartilage onions corn I add green or yellow beans and tom juice but I add tom cans and spinach I add n she always out turnip too carrots. When I'm sick it's my go too. I'm g9na do one now but I'm missing a few things carrots n I'm missing turnip. But she never used cabbage. I loved cabbage roo

    You are the best... I’m so glad I came across your video. I’ve been struggling with weight gain and low energy thanks to a horrible med withdrawal. I can’t seem to loose the weight because of water retention and thanks to your wonderful idea, I don’t have to resort to the lemonade diet (yet). This is full of nutrition, keeps me full and best of all, it stopped all my food cravings!!! I love to be able to focus on other things instead of just food. Veggie diet may not sound appetizing but I was able to impress myself with the yummy veggie soup I cooked up. Win, WIN!!! No bad side effects with this. I will keep this 1 week (1 time per month) as a detox.

    Thanks as always Doc. Another great video. I actually did this a few weeks back and it was great, so I'm happy I found this. I felt better after just a day or two with more energy and far less tiredness through the day. Made it exactly as the good Doctor suggested. Can of tomatoes, water, chicken broth cube, sweet potato, diced peppers, garlic, onion, can of beans (chickpeas) and whatever you have in the fridge at the time. I made it just with onion/garlic, potato and beans once because it was al I had in the kitchen. Also threw in some smoked paprika, pink himalayan salt, pepper, cumin, curry powder and chilli powder. Always turned out great as long as you keep tasting for seasoning while cooking, and adjusting to how you like it. Anyway, just found this video so I'm definitely starting this again today and I'm going to keep it going for 4-5 days, maybe 7, and not use meat. I personally find that leaving out meat for 4-5-6 days really helps with, errrrrrrrrrrrr ..... elimination ..... if you know what I mean !! Prior to that I didn't feel I was going as often as I should and also not "releasing" nearly as much as I should. Did this and problem solved. Definitely does your inner plumbing a lot of good.

I want to point LEEK, I did not know so great benefits with LEEK, but leek is cancer fighting in some cancers even better than the garlic.     You just gave me some inspiration - I have to go the supermarket later today and I was trying to decide what I felt like having. I've made this sort of thing before when it starts to get colder outside and I'm more in the mood for it. It can be a chore at times to cut up all the veggies, but once they begin to cook it smells so good. My favorite thing is to make a big vat of it and feast off of it for as long as it lasts.

    I grew up on this, mum used to make chicken stock (strain it and skim off the fat) then cook the veggies, also add some lentil and kidney beans after couple of days ~ delicious 😋

    I enjoy watching your videos , i recently made last week smoke turkey veggie soup, since i really dont cook with salt , i chose smoke turkey leg for flavoring along with ms dash seasoning. the turkey was boiled in water no oil added till the meat fell off the bone, the i added fresh collard greens , spinach , celery, cauliflower, broccoli, carrots , roast garlic, jalapeno pepper, green pepper, onions. i made a big pot of it . i put some in containers and froze the rest. Now ive taken the soup out to have for the next couple of days. Be Blessed everyone.

    I make this often and have for awhile. I stopped eating a lot of meat a few years back n started making what I call my meatless beef stew. I make it just like I did my beef stew sans the beef. I often will add collard greens to mine as well as the other veggies. I'm an empty nester so my meatless stew usually lasts 3-4 days. I don't really like to cook since the "stew" lasts several days, this is perfect.

    Hey Doc! It's great. Obviously it's great. I am asking you to suggest the same excluding those which increase uric acid.     I make a big batch of Minstrone and freeze it. It’s great for those evenings when I don’t feel like cooking. I use Mud Water and Turkey Tail mushrooms with MCT oil. I can move so much easier since starting this.

    I live off of different vegan combinations of veggie soup, fruit smoothies, whole grains, and teas. I keep the saturated fat, added sugar and sodium low while also keeping the fiber and protein high. I feel great and hardly ever get sick. If I do get sick, it's not for very long.

    Do the veggies need to be organic or maybe at least local (farmers’ market) to do the best detoxing? And are there certain foods that need to be used to get the best acid/alkali balance? Hopefully you actually answer questions, Dr. Mandela... I know that I’ve asked others that haven’t been. While I realize it’s a huge job when you have as large of listener group as you have, I also know it’s so very important for future/continued success in any social media market. I most Certainly Appreciate it when I am able to connect with a media creator, or even just someone on their team.

    DS - Not all soy is GMO. While I personally stay away from soy because of the estagrine like hormone that actually GIVES me hot flashes; organic soy is still something I consider healthy. Remember that soy was originally Just a bean. And while it’s become so much more than that now, it is still a bean. By the way, Doc, are beans an alright addictive to our soup? I saw Lima beans in the very first shot when you were talking about non-protein soup. Brought to you by the farmers in Iowa who raise Non-GMO Soy!!!
