This improved version of the Long Island Iced Tea was created the beverage director of Porchlight NYC, Nick Bennett. Nick also spent time behind the stick alongside Dave Arnold at Booker & Dax. His Long Island Iced Tea recipe sees a few subtle improvements including the use of aged instead of unaged rum and tequila, a spiced citrus syrup, Fever-tree cola and a healthy dose of Angostura bitters.

LONG ISLAND ICED TEA INGREDIENTS:
- 1/2 oz (15 ml) vodka (bit.ly/curiada-vodka)
- 1/2 oz (15 ml) gin (bit.ly/curiada-gin)
- 1/2 oz (15 ml) aged Guyanese rum, preferably El Dorado 8 (bit.ly/curiada-el-dorado)
- 1/2 oz (15 ml) reposado tequila (bit.ly/curiada-tequila)
- 3/4 oz (22.5 ml) Cointreau (bit.ly/curiada-cointreau)
- 3/4 oz (22.5 ml) lemon juice
- 1/2 oz (15 ml) citrus syrup (see below)
- Cola to top, preferably Fever-Tree
- 4 dashes Angostura bitters
SPICED CITRUS SYRUP RECIPE

- 1 lemon zest
- 1 lime zest
- 550 grams water
- 525 grams sugar
- 12 grams ginger, chopped
- 1.25 grams salt
- 22.5 ml lime juice
- 15 ml lemon juice
- Citric (amzn.to/3RjE3NO) + malic acid (amzn.to/3P8SGRi) based on syrup volume (see below)
METHOD
1. Combine all ingredients except the juices.
2. Simmer for 20 mins.
3. Add the lemon and lime juices.
4. Let the syrup cool and filter.
5. Measure the volume in milliliters, then add 10 grams citric acid and 5 grams malic acid per 1000 milliliters syrup.
6. Stir until the acids are dissolved.

So this is the kind of video that folks who are home bartenders and "mixologist" enjoy. Some of us aren't just looking for a recipe. Sometimes, a video like this serves as inspiration. Literally today, I made a Mineola Sherbert that I acid adjusted (I used citric and tartaric acid). Keep the long form videos.

Between this and another video, I am loving how the Long Island Iced Tea can be turned into a classy drink.
Switch out the cointreau to blue curacao and the coke to sprite/7up and you get an Alaskan Iced Tea

Looks and sounds delicious!
Since I never really liked rhum and rarely have a bottle on hand, I once decided to make a Long Island with peach liqueur instead of rhum and it was a game changer for me and my guests. Adding angostura bitters and a spiced citrus syrup also sound like a great idea that I'll try next time.

As far as I know the original LIIT recipe is with white rum, which tastes really different from brown rum. I tried it with brown rum once when I was out of white, but definitely other prefer white!

Great content, Steve! Had an 80s revival cocktail challenge this summer where we similarly updated (awful) 80s standards into something a bit more refined - like an updated Blue Lagoon. Didn't think the Long Island was salvageable, so will have to try this!

I always thought LIIT is lazy confused concoction designed to satisfy hard core alcoholics but your version makes it legit cocktail

Long island ice tea and its variations are my fav. Will be trying this. Best one I've ever had Is a long island Peach ice tea, with peach gin and archers instead of triple sec
Didn't want to wait for the ingredients to make the citrus syrup to try some of the stuff you mentioned, so I did my own thing inspired by this and it was great! 1/2oz Bourbon 1/2oz Vodka 1/2oz Gin 1/2oz Aged rum 3/4oz Cointreau 1/4oz simple 1/4oz turbinado syrup A few dashes of each angostura and orange bitters A shake of ground ginger Top with coke in a glass of ice I needed to shake this one longer before pouring over ice because it needed more dilution, but it came out excellent! Ginger + bitters + aged liquours really add depth to this cocktail. Can't wait to try the full official version once I make the citrus syrup!

Recipe looks incredible. Definitely going to try it soon. Maybe stupid question, for the syrup, what are the conversions of the sugar, water? Also, could I just peel both the lemon and lime in the recipe? Keep up the amazing work.
I found one I thought you would like when we were on a cruise last week. Dublin Ice Tea (my wife got at the English Pub on board. • Bacardi superior rum • Jameson Irish Whiskey • Hennessy Cognac • port wine • Guinness Draught Stout I'm not 100% of the mixture but was told 2oz of everything except Guinness and they used 8oz of that.

Back in the day when I poured, I was taught to make it with the 5 clears (well). Vodka, Rum, Triple Sec, Gin, Tequila, Sour mix and topped with cola, typically Coke in the U.S.

Happily making these and after a couple forgot to put the coke in ... very bad mistake, remember the coke folks, I know you don't have it in Oz or US but Curiosity cola is so much better than Fevertree 👍

I wonder if the citrus syrup would work in an Old Fashioned. You usually garnish with an orange or lemon peel anyway... Maybe it would be too much citrus though.

It would be worth a try! Keep in mind that it does have citrus peel, juice and acid added.. so it’s a bit tart.

Not sure about whiskey based old fashioneds, but I think it'd make a banger of a rum old fashioned. I'm picturing it reading like a more amped up and spirit forward corn and oil.

@@StevetheBartender_ hi Steve the audio is not in sync with the video, the audio is a bit behind. Also the suppression of the background sounds makes it feels somewhat disconnected. It feels more “authentic” or “live” to me when you hear the sounds of what you’re doing.

Why do American restaurants that serve adult beverages always leave out the tequila? I have to ask for it every time. And sometimes they only bring me a shot of tequila on the side. And of course, that's an extra $8. Long Island tea has ALWAYS contained 5 liquors. And it should be served in a "TALL" glass.
Some might call that citrus syrup a cordial.

@@irashidov simple = easy to make. I would deem it as hard if it had 15 steps to make it and it required inaccessible or expensive equipment. The steps required for the syrup is essentially "make a syrup and measure several ingredients".
