Sevlija Blazevic i dont think you understand what this method does to the fish. Fish is already painless when you insert the wire. It is just a reflex response. This is so much better than other methods

안녕하세요! 전 현재 회에 공부중인 학생인데 머리를 어차피자르고 씻어낼껀데 내장을 왜 아가미쪽으로 제거하는것인지 궁금합니다! 갑수님!

웬만한곳에선 기생충이나 배설물 제거 안하고 그냥 쑹덩쑹덩 썰어줍니다 여름방어는 개도 안먹는다는 말이 있는데 쓰레기라는게 아니고 그만큼 조심하라는 뜻 같습니다

신케지메 보면서 뭐하로 쑤시냐 그냥 머리자르고 손봐주면 잠잠해질텐데 하시는분들 있던데 저런 거대한 생선이 칼이 들어올때 몸부림치면 요리사의 안전과 직결되는 문제이기에 저항을 최소화 할려고 하는 방식입니다 물고기가 편안하게 갈수있는 방법이기도 하고요..

여름철방어도살이괜찮네요!! 저도맛횟집실장하고있는데 갑수님찾아가서배우고싶네용!!

대형 개인 마트여러군데에서 정육일하면서 수도없이 많은 회실장들 봤는데 이사람만큼하는 칼잡이는 아예못본듯 유통인들 특성상 본인이 최고라고 자부는하는데 이분꺼보면 나갑수미만 잡인듯함

Thank you for showing this video and I would appreciate if can answer my questions. ( 1) if there are worms or parasites in the fish , it is generally known it is unsafe to eat sushi style unless you freeze the meat for at least 48 hours . Is this medically proven the freezing process kills the parasites. .?? and the eggs ?? (2) If you wish to eat the fish right away the only safe way is to cook it, so they say. Is this true?. What about the eggs of the parasites?? The cooking process kills everything including the eggs ??

Not a person from video but (1) boiling or freezing do kill parasites, as seen on this video, spots of parasites and where it passed through are removed cause it can cause you diarrhea, and sick (2) there are different kinds of fishes that you can and cant eat right away, and some fish you just need skills to make it safe. But to be cautious most sushi places freeze them to kill bacteria and parasites in it. This goes the same on pretty much every different meat

anak konda the blood in this fish is in its gills and the blood line, which runs through the center of the fish. Which gets cut off once they fillet the fish. So this is definitely the fastest way for fish to die. If you just cut its throat or gills. It takes much longer for the blood to bleed out and the fish to die.

From the water they take nutrition from the fish

That was not a few at all, at least for me. I would cut the parts that had parasites and give the rest to street cats or something. I would not definitely eat that at all.

Is that fish still edible to be eaten? It's already contaminate by the worms after all 😱

ofc not! if it has at least one parasite it's infected and shall not be eaten even on "clean" areas. Don't eat fish with parasites. Even if it says that there's no worries, there could be eggs on it. Don't risk your health please!

Dude there's most likely not a single fish now a days w/o parasite. There are ways to make it safe. Either cut around the infected area like shown in the video or freeze it or u can also do a technique called Sujimé. Prob the best way would be to do all 3. But an infected fish doesnt mean it cant be eaten. Unless is a super super infected fish butbutthat was not the case here

This fish should have been discarded! Unfortunately someone will be eating it! NASTY!!
