Pumpkin Basque Cheesecake (15cm mold)
Ingredients
230 g pumpkin, pureed
200 g cream cheese
100 g sugar (if you use a sweet variety of pumpkin, you can reduce the amount by 20-40 g to your liking)
3 eggs
200 g heavy cream
About 3 sprinkles of vanilla essence
(1) Cut the pumpkin and put it in a steamer with the skin on. 10 to 15 minutes and steam until a bamboo skewer sticks through the pumpkin.
Remove the skin with a knife. It tastes best when eaten while it is hot and soft. It is good as a snack!
(3) Strain the pumpkin. If you do not have a special tool, you can use a colander with a fine mesh.
④ Knead cream cheese to soften.
⑤ Mix with sugar and add pureed pumpkin.
⑥ Add eggs, then cream, in that order, and finish with a little vanilla extract.
7) Strain the mixture again through a colander and pour it into a mold lined with a cookie sheet. 8) Preheat the oven to 250℃.
⑧ Preheat oven to 250℃ for 30 minutes (I think each oven has its own habits. Mine seems to run much lower than the temperature setting, so you may want to adjust the temperature to 230-250°C!)
Pumpkin Gratin
Ingredients
200 g pumpkin
1/2 onion
Maitake mushrooms, as desired
As much macaroni as you like
10 g butter
20 g flour
300 g milk
Salt and pepper
Cheese, as desired
1) Put butter and pumpkin in a hot frying pan.
Add onion and maitake mushrooms and mix lightly. Add a little water and steam for 10 minutes.
(3) Add flour and milk in 3 parts. (If you add it all at once, there is a possibility of lumps.)
(4) Mix slowly over low heat until thickened. Season with salt and pepper to taste and serve.
Top with cheese and toast on a burner or in a toaster for 8 minutes.
🥖It is also delicious on a bucket, so you can make more and freeze the leftovers 🥖
🎃This time I used a sweet pumpkin called chestnut marron. It seems it's only grown in a limited number of places in Hokkaido. I wonder how many more I can eat 🎃.

Hola Pachico! Hola a todos! Yo estoy muy agradecida de tu valor al decidir vivir con mas sentido. Desde que encontre este canal me siento acomoañada y muy identificada con tu vivir. Yo tengo ya casi 7 años que vivo en Chile y mi vida es totalmente diferente, deje mi profesion que ejerci por mas de 30 años para dedicarme aqui a la pastelería, "mi sueño"! Y por supuesto que tengo menos ingresos monetarios, pero recibo otros pagos que alimentan mi alma! Por ejemplo, levantarme a la hora que deseo, generalmente a las 8 de la mañana, eso nunca fue posible hasta ahora, me levantaba muy temprano para salir a trabajar y llegar a tiempo. No tengo que enfrentar el frio del invierno en la calle, ni el terrible cansancio de regresar tarde. Hoy que trabajo en mi casa, ajusto mis horarios para cumplir con mis entregas en paz y calma. Ahora soy vegetariana, lo que deseaba desde hace mucho pero no tenia tiempo para dedicarle a aprender esa nueva cocina. Asi que no gasto en carne, que suele ser un alimento costoso. Ahora tengo 3 gatos!!!! Y amo comoartir el dia xon ellos y disfruto enormemente de su compañía! Nunca antes disfrute de mi hogar xomo ahora, y si tengo menos dinero, menos ropa, un solo para de zapatos pero... quien dice que se necesita mas de eso? Tengo a mis gatos, mi esposo, mis hijos en sus propias vidas pero cerca, tengo un lugar donde vivir a gusto y en paz! Definitivamente , vivo mucho mejor y mas feliz que nunca antes. Sigo creando sueños y buscando cumplirlos, porque eso es lo que somos Creadores!!! I envy your opportunities to set your own course. I still have to work outside and sometimes I think the quality of my life is not great. I agree with your outlook on life. Since the hit of this Pandemic, I've been trying to live with less, wasting less, using what I already have or adopting second-hand items. I think we (the humans) have ruined the earth detrimentally in the last century or two. I'm a first time visitor to your KZread from CA and love your take. BTW, did you know that you can roast pumpkin/squash seeds? It's easy and yummy! Yet another way to make less waste.

Such a great content, full of wisdom. 😊 I too, quit my job a year ago and haven’t missed the hustle and grind. From making 50k a year to now 0. 😊 i did saved and invested in the index funds in the last 8 years and invested in real estates. At 38, when I left my career behind and moved abroad to Finland for a much calmer life for my family, better healthcare and education for my son, there’s no regrets. Find a way to live on less so you don’t need to make money. Time and health really are the essence of life.

北海道に住んでいますが、冬の自転車は無理です。徒歩で移動出来る距離も限られますし、一度に沢山の荷物も持てません。雪の積もる地方には冬だけでも車は必要だと思います。
猫と暮らせたら私それが原動力になれます。かわいい猫さんがいるだけで癒やしです(*^^*)
