yes, it's possible to build speed at 0 stamina due to an oversight in how speedcaps work. If you chain a lot of perfectly timed jumps at below 10 stamina you can actually go faster than what's normally possible.

place something (in this case a block) partially obstructed and then tap grab (easier with left click than controller trigger), the slide timing and this trick overall take a good amount of practice to get consistent at

It's pretty much impossible on controller, but you just have to walk right, jump and then grab after you touch the sausage

The verifiers on speedrun.com agreed that 'speedrunning' the last couple minutes, which is just holding up, was no fun and it wouldn't be possible to save time there, so the timer is programmed to end on the shattering of the mirror.
