Lisa Mauer

Lisa Mauer, an Associate Professor of Food Science at Purdue University, explains deliquescence, a phase transformation in which humidity causes certain substances to dissolve, changing their chemical compositions. Deliquescence is an annoyance in kitchens, causing caking of salts and sugars, but can cause loss of stability and effectiveness for dietary supplements such as vitamin C.
