Tried various tips and tricks on the Tube concerning the lighting, modifying and running the Pit Barrel cooker. Finally decided Noah's simple way of lighting is the best. Easy, simple and it works. Also did my last cook on my unmodified PBC (ribs), no temp prob or other teky devices, just a relaxing time not fretting over details. That's what BBQ is all about. I do use one high teck device however....it's the optional wood inlayed 'hook lifter and bottle opener' combo offerred by PBC. I mean, after all, them long necks ain't gonna open all by themselves, right?

I use the jr and follow the directions to light and also have had no issues so far. It's weird to not have to look at a temperature gauge for the pit temp the whole time like I use to. I light it, put the meat on, and let it do it's thing. I check whatever I'm cooking when close to done time with a thermometer or the bend test with ribs....so easy.

@@rocket4602 it's a great cooker. I think people have temp problems when they don't follow the instructions for setup and lightning and also peeking at the food inside the cooker too much. Just my opinion though.

You have problem with temp control? I love my pbc but I'm fighting with the temp every time, I get it lit add food but my temp shoots up past 300° and slowly drops under 250°, and under. I have to keep lifting lid to get it up to temp back and fourth, for something that I'm pose to lite and forget it's not working like that for me. Do I need mods or have I been doing something wrong? Within 2hrs my temp under 230° and I have meat/temp prob to monitor my heat.

Hey buddy...no sir...havent had any issues. It does run hot around 275 to 300. Check vent settings, Charcoal and lightinging instructions. One thing I did was get the ash catcher it brings up the charcoal basket just a touch. I also stopped monitoring temp w my probes..I just let rock...Done 20 lb brisket 8 hrs...still had charcoal left..You should contact the Pitbarrel I hear they have great customer support.

Thanks for the video... I have several bags of Stubb's charcoal I'm going to be using (got on discount at Lowe's) ...I have two concerns with lid/cooking after 12 mins. 1) fire won't be enough and will produce acrid/nasty smoke and/or 2) droppings from say 3-4 chicken halves etc. will nearly knock the fire out. Thoughts? Suggestions?

I'm really struggling to keep the temps below 300 as the cook goes on. Even using just a few lit coals to start lower, it eventually climbs over 300, often pushing 350 degrees. Especially if I have to take the lid off, only for a couple seconds. I'm at 900ft, I keep the intake as closed as I can and even often plug 2 of the vent with foil and I'm struggling. Any suggestions? Oh and I'm cooking in winter 20 degrees ambient temps too... I'd really like to lock down that 270-300 temp for cooking. Temperature creep seems inevitable.

Any tips on controlling the temperature? I used my new PBC for the first time yesterday. Couldn’t get it below 310 degrees. At one point I tried plugging the the rod holes with foil but that didn’t work. I wish the vent could close completely.

Be sure to only let the charcoal burn for 12 minutes for the lighting time. If you go longer you can start off too hot and the charcoal may exhaust too soon. Never hesitate to contact our office with questions or concerns. You can find more information at www.pitbarrelcooker.com. Thank you and enjoy!
