From a school trained chef, none of this classic american cuisine is ever taught in school. you have to find the real OG and newcomers to get the info on how to do classic American smoke bbq. Thanks for all the knowledge you and the rest of the great people of bbq do to help spread the knowledge. Im a big Chud Fan, and now yours too. keep up the great work.

Yea. You’re right. I’ve watch countless hours of videos trying to figure it out, but you have to do it a lot to really understand it. There are just too many variables. I appreciate it. Thanks for watching.

I would definitely recommend it. We had quite a few people who took the class even though they weren’t planning to do pop ups or have their own restaurant, but thoroughly enjoyed it.

Badass video! You guys documenting this stuff is important to people trying to get started. That being said I’m Opening a bbq pop up in so cal. Built my own 500 gallon smoker on a trailer. What is the most basic equipment (warmers, coolers etc ) that I’d need to perform proficiently? Budget is getting tight and I don’t have service equipment.

Man, that’s a loaded question. I don’t have specifics, but I would just say to start small and with whatever you can afford. Don’t buy stuff just cuz you see other places having it.

Check out their website, but since they’re in the middle of opening a restaurant I don’t think they have one planned any time soon, but you can always email them and ask
