Lemonade Swiss Roll Recipe
A recipe I like to make from time to time that I thought i'd share - a lemonade swiss roll!!! This thing is a little twist on a classic swiss roll, using sherbert, lemon curd and a homemade lemonade syrup to give this rolled up cake log a nice zingy angle, I add poppyseeds to it also, but you can play around with it any way you like!

Barry when you squeeze the juice out of your lemon in the yellow gadget turn the lemon upside down so the cut side is facing up. You will still get out all the juice without having to strain 😀

When I make a similar rolled sponge, I always sprinkle the sugar directly on it right out of the oven, then place a paper and grate on top, hold it together and flip. That way you don't have to aim the flip, no wasted sugar margins and the sugar melts into the surface better when added on a hotter sponge.
Before I was just a fan, but after watching this masterpiece, I am a whole air conditioner.

If it breaks really, really bad; get a trifle bowl out, some fresh fruit and whipped cream and make a trifle.

@@mrbarrylewis A cake disaster should be trifled with, and sweetened whipped cream fixes everything.
To avoid cracking, shave off the sides of the sponge. it usually breaks because the crusty bits creates tension on the sponge. Also, before rolling, top your sponge with a lightly damp towel, the steam will help make the sponge a lot more flexible.

Was going to comment about the damp towel, but realized to check comments first. This is absolutely the best tip in my opinion.
An espresso and caramel one would be amazing! Then use either Baileys or O’reilys Irish cream to make a sauce that you drizzle on once you slice and plate it. 🤤

I love the usual Barry tries, but it is refreshing to see you so confident and not making any mistakes! 😅
It's so interesting learning the difference in products from other countries that have the same name as items I'm familiar with in the US. Here if you said sherbert people would probably think of a type of sorbet or ice cream. If you say lemonade people think of a concentrate or mixture of lemon juice, sugar & typically flat water.
Top tip for that style of juicer, I've found that if you chop the ends off the lemon before halving it it gives your juice an exit point. Game change, you can thank me later 😉🍋👌

i made it!!! After days of contemplating on whether to make it or not i finally gave it a go! All I want to say is this is well worth a try. too easy and too yummy! Not gonna describe the taste to anyone coz it should be a pleasant surprise! For me it was. I set my oven at 180c bcoz it started to brown a lot ig every ovens built differently

I recently saw a tiktok abt a lemon juicer hack & decided to try it, worked like a dream. She just cut the lemon in half & then cut the end off as well just until you see the fruit instead of pith. Pop it in the lemon juicer & continue as normal but it's able to press all the way through a lot easier & gets way more juice out.

It's funny all the years that I was a chef before I retired I never was a Baker I always hired a Baker in the restaurant I opened for people. But I think I could actually make this Swiss roll and you had me laughing when you showed your messy kitchen because when I do my KZread I decided they gonna see everything they're gonna see the mess they're gonna see my mistakes I'm gonna be real and I'm glad you are too LOL I just got a double waffle iron they're round waffles and you can make two at a time my creative juices are flowing 🌻✌💪💖👨🍳🎅🚌👍
Trick towel under parchment also press a groove at the front edge give you a real tight center

I can't count the amount of times I came home from school in the 90s to my grandparents house and my grandma's sister and brother in law would be visiting and they always had afternoon tea regularly ( Always cake, biscuits including many Swiss rolls and other things yummy on offer).
That San Pellegrino Lemonade at 03:40 is one of my favourite soft drinks! Love it
That looks yummy. To those of us on the other side of the pond, Britsh lemonade is our Lemon Lime Soda (7Up or Sprite). That kind of sponge cake does crack easily, but pre rolling it while hot does help. And it will taste awesome, cracks and all. And bring seen on Moonbase Alpha. Awesome.

In Sweden we have the jam one, but also a chocolate sponge swiss roll with buttercream called drömtårta in English dreamcake, but I did a really tasty swiss roll that tasted like a cinnamon bun with a cream cheese filling.

Is the chocolate sponge a chocolate buttercream? That's essentially a chocolate log at christmas here

We also have the chocolate one in Norway as well as a few jam ones, the main ones being raspberry and strawberry. We also had a swiss roll at one point with a layer of marzepan in combination with raspberry jam (A common birthday cake combo here), it was sickeningly sweet. Fun fact, we call it "Rullekake" which translates to "Roll cake". Homemade is always the best though, my grandma used to make it with homemade raspberry jam, and sometimes with cloudberry jam as well, it was divine.

@@Malmern We call them rulltårta. I have not heard of the one with marzepan.
A damp tea towel can work beter than the parchment paper. If you're worried for breaking, you can lightly score the cake with a knife. It will roll easier.

I always leave the hot pan over the sponge after i flipped it, lets it cool down with the pan over. spread jelly on it and then roll it. 100% success rate, never cracked for me with that method!
This looks amazing!! I make Swiss rolls at Christmas (Yule Logs) . I also make Pumpkin rolls. Have you tried those?? They are amazing!! I will definitely be making this Lemonade Swiss roll. Lemon is my favorite flavor.

Put a damp tea towel under the baking paper with which you roll it up and then leave it in there as well until you roll it out again, so it should stay even nicer

I guess this is a common version of it? Granny used what must have been whipped cream and strawberry jam. Cream cheese wasnt really used in Norway in the 80s, but that would work too, I guess, more tangy flavour? Might have had sugar in the whipped cream.
Have same press trim off the point of the lemon press perfect gets all the juice
I know you already tried to Sodastream stuff with Ashens but have you ever tried making something with the Sodastream sirup? They have everything nowadays, from Pepsi to Mountain Dew. I would be curious if you can make something out of those that actually tastes good, like a Pepsi flavored cake or a Mountain Dew ice cream.

I guess the syrup made in the video is a bit like the syrups in the soda streams etc, that's a cool idea for a video though. I mean you can make a cake with a can of coke and a cake mix, but the flavour isn't so noticeable, but a syrup will be stronger so potentially a good one!
I've never let a cake cool as a roll when making a rolled cake. I, however, usually put in a little less flour and substitute it with potato starch to make it softer

barry you're making things difficult for yourself with the juicer. cut the end off each half of lemon and you will squeeze with ease and get maximum juicage 😁

Oh my commodore 64 Could you use ginger beer and poppy seeds ??? Also poppy seeds spike the alcohol radar to read over .05
To help it from sponge from cracking roll it up into a damp tea towel before u let it cool.

I've always found that if you make sure it's just baked as the more you bake it the firmer it becomes and roll it up as soon as you can really helps too. Rolling pin is another one as I think sometimes I just tend to fold it too much like a paper lol will have to try the tea towel trick, nice one thanks

A commodore 64 is one of the earliest USA computers. I'm surprised it is still running. Your watch probably has more computing power. The Lemon Swiss roll is just dangerous!

It's a step between icing sugar (confectioners sugar) and the sort of sugar you'd put into tea or coffee. Not so coarse.
In the US, it's not called a "swiss roll tin", it's called a "jelly roll pan".

I wonder how this would be made with blood oranges? San Pellegrino make a blood orange variety of their gorgeous pop and, goingo n a citrusy tangent here, but how about with bergamots instead of lemons? Bergamot curd is lovely too (but I don't think there's a bergamot San Pel). However, this...this is just total...food parn (purposeful misspelling there).
