The jerks are episodic. Sedimentation, too, is episodic within the context of a single larger catastrophic event.

I have a question. Folds DR Butler demonstrated are with flexible papers, not solid/concrete rocks. could you explain why all the layers could fold together without breakage?

That's because folding occurs over millions of years. High temperatures coupled with slow deformation rates leads to ductile behaviour.

Depends on the ductile & brittle behaviour of rocks... Subsurface conditions gradually change from brittle to ductile as we go deep inside the Earth...
