I've watched quite a few videos on how to recover once in the water, but not seen many that help recover before capsizing Great tips.

properly done, at least for me, it feels as if I am using the paddle to "sweep" the kayak back under my body weight. just be sure to knife the paddle blade forward out of the water. it's easy if you're feeling panicked to just pull it straight up, which will pull you back over the side of your stability again.

I am glad that you have also talked about sculling as a method of stabilization: kzread.info/dash/bejne/p5eDzrl-aMKfgtY.html

does this work for sit on tops as well?

Yes but no. As you do not have knee braces you don't have the same amount of control as you do in a enclosed kayak. In terms of ocean skis/surf skis (high performance boats which are narrowish) you apply the sam principles. Most recreational sit on tops are wider which creates solid primary stability, you can give it a crack but they are less forgiving as once on edge they tend to capsize quickly.
