Learn the correct technique on how to whip cream using both fresh cream & whipping cream

You might have seen many videos on this and this might look very simple, but it is very important to beat your cream properly in order to get the perfect finishing on your cakes and pastries. A bit too much and a bit less could make a huge different. I have had many users asking me for this video so here it is. The first part shows how to beat fresh cream, the timing, the continuously checking, how to judge how much more to beat and the final consistency checking. In the second part we use chilled whipping cream and then show how this even though being similar has different parameters of checking in between stages so that you get the perfect cream for your frosting.

    Hello manju Sethia ji.....v informative video.... I tried whipping seeing this video.... It whipped well and was not dropping from bowl when inverted.... But I noticed that during piping it was not giving very stable designs... I felt it melts a Lil at room temperature... I used tropolite premium cream.... Can u suggest some solution to my problem so my cream is more stabilised and give structured designs

    It’s better to buy ready made sugar But u can make it Take 1/2 kg of sugar and 2 tablespoons of corn flour and grind it very very finally . Sift it and grind again so it becomes very very smooth

    Hi Ma’am. Love your videos.. you always give all the info we need and all the tips which usually aren’t there in other videos. I know very little about creams but I thought we can’t beat fresh cream to get whipping cream as it’s fat percentage is very low around 25% and that for whip cream only 35% to 40% is necessary. Can you please help and tell me where am I going wrong? And also I want to know a little more about the storage of whipping cream as there are always icicles formed. Tropolite instructs that once it’s removed from freezer then only refrigerate the ceram or something like that. The instructions are quite confusing can you please help Ma’am please?

    Yes you right it’s all a bit confusing. I’m going to clear ur doubts hopefully. 😊. Fresh Cream There r 2 types of fresh cream double and single . As you rightly said the fat percentage of single cream is low so it doesn’t get whipped. So we need to use double cream which has a higher fat content. I have mentioned in the video that I’m using double cream. Pls always store the double cream in the fridge n not in the freezer. Shelf life is a day or 2 depending on the weather in your country. Abroad the shelf life is better as you buy it in proper packaged containers whereas in India we get it loose. Whipping cream There are many brands but how to use it is the same. Whipping cream is always stored in the freezer Bakeries use many packets in one day so it is suggested that we keep the packet a day before use in the fridge so it gets defrosted but still remains chilled. But for home bakers I would advise that when you buy the whipped cream transfer it into 2 to 3 good quality airtight containers and freeze them. In this way the cream will last longer and you only defrost the quantity you require . It’s important that whenever you whip the cream it should have no icicles but still be chilled. You don’t require to put this over ice. Pls use the cream as soon as possible after whipping. If you are using it say half an hour later it may loose its sheen and get a bit thick so in this case add a little bit of un whipped cream and just whip it again very gently for a minute or so. Left over cream needs to be stored in the freezer but when you use it you need to add some liquid whipping cream and rewhip it to get it back to the correct consistency. I hope this helps you. I just want to say this is the way we handle the cream issues. Others may have their own way so please do whatever works for you.

    Ur most welcome. Well for cake frosting you must whip until u get peaks , for piping 30 seconds longer and for flowers until u get stiff peaks. It's all about trial n error to get that right consistency.

    Which cream r u using. Once u have beaten the cream pls use it immediately. You will get best results. Make sure u get those stiff peaks c

    @@ManjuSethia_SCS rich cream. I use immediately but when we layer the icing and mix color if required and use it , it looses its stiffness bybthr time i give finishing touch. Can you please give me tips on how to apply icing on the sides ,...fot clean finishing. May be a tutorial on how to apply icing and what type of icing knife etc etc. Thanks. I really love ur videos as they r so simple n fine too. Apart from it u explain very well. Above all i find ur videos are more understandable in compare to other western videos. Thats for your guidance. Waiting for other tutorials , especially on icing.

    Ur most welcome. Start with medium then high and then again medium n low at the end so u don’t over beat the cream. 🌸🌸🌸

    No Amul is unpredictable. Use Rich's or tropolite

    I cup of sugar and one tablespoon of corn flour. Grind it very very finely. Then sift it 2 or 3 times.

    I whipped cream on this recipe but when I start putting cream on sponge it starts melting even I could not make flowers when I put whipped cream in icing bag

    If this happens you must understand that you haven’t whipped the cream enough Pls watch the video on how to whip cream correctly For flowers you have to beat the cream even more so it’s quite stiff .

    When you say fresh cream is it amul fresh cream?? Can you please clarify... Also my whipping cream always had Stiff peaks but when I do the piping I don't see designs as perfect as yours.. could you please suggest

    Ma'am, I had kept the Amul whipping cream at the refrigerator door. Took a cup of it mixed with 20ml of sugar mixed water, then been beating it up for more than an hour with beater but definitely the quantity has increased & bit fluffy as well, but not as fluffy as to be able to use it in middle of cake slices & cake topping. At this fluffy stage if I turn the vessel aside it the cream tend to flow & fall. Where did I go wrong? What is the solution of it now/how to fix this cream?
