I enjoy just listening to those two talk and give the history of food and how certain dishes have evolved. Love it.

Gumbo z'erb or z'ev is a *meatless gumbo with greens ,one for each of the apostles, eaten on *good *friday.

That's right! When I was very young I would hear the old folks even say gumbo "z'ev".
