Looking for Layali Lubnan recipe/Lebanese Nights recipe? Well, you're in the right place! I LOVE Arabic cuisine and I have a weakness for Arabic desserts, one of my favorite Arabic desserts is Layali Lubnan or Lebanese Nights Dessert. It's a fantastic Semolina Pudding topped with Ashta cream, pistachios, and sugar syrup. Making Madlouka is fairly easy but does take a bit of time as you have to wait for the semolina pudding to cool for a couple of hours. Trust me, it's totally worth it. Here is my recipe and as always, I'm happy to hear your comments and feedback.

✔️8 cups (2ltr) Whole Fat Milk
✔️1 cup (170g)Semolina
✔️1/2 cup (100g) Sugar
✔️3 tbsp Rose Water or Orange Blossom Water
ASHTA CREAM
✔️1 cup (240g) Heavy Cream
✔️1/2 cup (125g) Whole Fat Milk
✔️2 tbsp All-purpose flour
✔️2 tbsp Corn Starch
✔️1 tsp Sugar
✔️1 tsp Vanilla Extract
TOPPING
✔️2 cups (250g) Toasted Pistachios
SUGAR SYRUP
✔️2 cups (440g) Brown Sugar
✔️1 cup (240ml)Water
✔️1 tbsp Rose Water
✔️1 tsp Lemon Juice
🕑PREP TIME: 30 minutes
🕑COOK TIME: 35 minutes
🕑COOLING TIME: 4 hours
🕑TOTAL TIME: 5 hours and 5 minutes

    I made this, and it was delicious . Only I made my syrup rose coloured , by adding rose syrup ... I found it prettier .👌

    I just made it with a little bit variations. I added cream cheese in the top ashta cream layer and put a crushed biscuit layer in bottom like cheesecake 😋 We will serve it in suhoor and see hows the taste.

    In India we make this for the young babies. Keep roasted semolina and mix it in the milk when the baby gets hungry.

    Thank you Yvonne, seal with clingfilm and keep it in the fridge, it will last 5-6 days. Just keep the syrup separate.

    First time I was lazy to make ashta and just used crème fraîche lol but this time I followed all your steps znd OMG it tasted absolutely delicious 🤤 everyone loved it and it was the perfect dessert for my Middle Eastern eid brunch

    Hi Samarah, I let it cool to room temperature. I add the syrup before serving to avoid soaking the cream.

    In alot of videos, i see people use whipped cream in place of ashta layer. I wonder which one is the authentic.. nonetheless I'll be trying this recipe as i alway mess up while making whipping cream. :) thank you for this chef.

    As a lebanese I can confirm ashta os the authentic version, in all my time in Lebanon iv never seen anybody use cream in place of ashta , bit I do see alpt of recipes online from people not living in Lebanon use cream, maybe they can't find it where they live

    Hi, Semolina is made from Durum wheat. I don't think there is something you can exchange it for with the same effect. :(

    Add one or the other, it will impact the after taste but both are used.

    Hi, you dont need to add lemon, sugar caramelises at 160 degrees, if you dont over cook it, it will not turn hard
