आज मसाला किचन मे बन रहा है इंस्टेंट चटपटा लबेड़े का अचार की आसान रेसिपी | घर मे लसूड़े का चटपटा अचार, गोंदे का अचार, देसी अचार, साबुत लसोड़े का अचार, राजस्थानी लेसवा का अचार, गोंदी का अचार, लेसुआ अचार की सीक्रेट रेसिपी, राजस्थानी लसोड़े का पानी बाला अचार, इंस्टेंट अचार कैसे बनाये | बिना धूप का अचार बनाने की विधि | लबेड़े का अचार का मज़ा लीजिये घर मे | खट्टा मीठा अचार, चटपटा अचार, मार्किट जैसा अचार, केरी का अचार, सूखा अचार, आम का मुरब्बा, निम्बू का अचार, लबेरे का अचार, केरी का अचार, अमला अचार, मिर्ची का अचार | दादी-नानी वाली अचार रेसिपी को शेयर करना न भूले | मसाला किचन | पूनम देवनानी रेसिपी
INGREDIENTS:
* Water(पानी)
* Turmeric Powder(हल्दी पाउडर) - 1/4 Tsp
* Gunda(लबेड़े, गोंदा) - 1.5 Kg
* Mustard Oil(सरसों का तेल) - 1 to 1.5 Cup
* Thick Fennel Seeds(मोटी सौंफ) - 4 Tbsp
* Cumin Seeds(जीरा) - 1 Tbsp
* Black Pepper(काली मिर्च) - 1 Tbsp
* Fenugreek Seeds(मेथी दाना) - 1 Tsp
* Nigella Seeds/Black Onion Seeds(कलौंजी/मेंगरोली सीड्स) - 1 Tbsp
* Red Mustard Seeds(लाल राई) - 2 Tbsp
* Yellow Mustard Seeds(पिली राई दाल) - 4 Tbsp
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 2-3 Tbsp
* Turmeric Powder(हल्दी पाउडर) - 1 Tbsp
* Crushed Red Chili Powder(कुटी लाल मिर्च पाउडर) - 1 Tbsp
* Black Salt(काला नमक) - 2 Tsp
* Salt(नमक) - 2 Tsp
* Asafoetida/Hing Powder(हींग) - 1 Tsp
* Dried Mango Powder(अमचूर पाउडर) - 1 Tbsp
RECIPE:
Break the Lasoda from the stalk & wash it well. Take enough water in a vessel and keep it to boil so that the Lasodas can be submerged in the water properly. Then put some Turmeric Powder & washed Lasodas/Labere/Gonda in the water. Cover & boil till they get 50% soft. Then Switch off the fire & drain all the water & keep it under the fan for 1 to 1.5 hours & then remove its peels cap.
Keep the pan on the flame, put Mustard Oil & heat the Oil till it starts emitting smoke. Then turn the flame off & let the Oil cool a bit.
Keep the pan for heating & put some Fennel Seeds, Cumin Seeds, Black Pepper & dry roast them. Then keep them to cool & coarsely grind them. In the same pan, dry roast some Yellow Rai Dal, Fenugreek Seeds Powder, Black Onion Seeds & take them out on a plate. Grind some Red Mustard Seeds in a jar & take it out on a plate. Then add roasted & ground Spices, Kashmiri Red Chilli Powder, Turmeric Powder, Crushed red Chilli Powder, Black Salt & Plain Salt & mix them all well. Then take a lukewarm Oil, put some Asafoetida/Hing Powder & mixed Spices & Dried Mango Powder & cook them a little bit. At last, put the Labere/Gunda/Lasoda in it & mix till the spices cover all the Lasodas/Gunda well. Finely take out the Lasoda Pickle into the bowl, cover it with the cloth & keep it for 2 to 8 days. The Pickle is ready, put it in a glass jar and enjoy the tasty Gunda/Lasoda/Labere Pickle for a long time.

I have never seen this lasode pickle variety with seeds inside it before.Aachar ki variety mae yae pickle humare liye bilkul nayi, tastyaur chatpati lag rahi hai.Aapko bahaut bahaut thanks specially is aachar koe khas banane kae liae aapne joe jaruri tips and tricks batai hai..,.

My mother in law prepares this Acharacle in a different way. She slits the gundas n removes the seeds n cleans them with lemon juice and dry cloth & then stuffs the masala in them. She also adds small pieces of raw mangoes n stores in an airtight container with the oil. It also tastes very good.

we also use to prepare in this way but without using lemon juice. Reminded me of my childhood. we had a lasuda tree in our house and we used to make this achaar in bulks. now we only prepare in small amounts as we don't have that tree anymore.

अचार बहुत ही सुन्दर दिख रहा आपने बनाया तो हमारी तरह ही है किन्तु आपने इसे वापस गैस पर नही रखा ओर हम गैस पर एक मिनट के लिए पकाते तब रखते हुए सालभर अब आपकी तरह से बनाकर देखेंगे

Good. I dont know what will be teast of Gunda prepared by this way. I usually remove seed after boiling Gunda. And it stay for 1.5 year to 2 year. In Gujarati way.
