Looks absolutely yummy...thanks for the detailed recipe.
Prepared it last week and added cut lemon pieces (1 lemon cut into 8-12 pieces) it has enhanced the taste so much that everyone now wants a piece of lemon when served. Lemon pieces get tastier and softer over time.

I think moisture is there. You should dry them properly before pickling.
