Kurdish Rice Dumplings | Kutilkêt Helebê | cooking my roots

A favorite in every Kurdish household are these meat stuffed rice dumplings. Every family has their own twist on these delicious fried oval spheres. Here is my take on it.
Servings: 30-35 dumplings/kutilks
Ingredients
Filling
500 g minced beef
1 large onion
1 bunch of parsley
50 g toasted almonds
2 tbsp golden raisins
Salt & black pepper to taste
½ tbsp Kurdish biryanî seasoning (cumin, coriander, clove, cinnamon, cardamom, nutmeg, black pepper)
½ tsp cayenne pepper
1-2 tbsp vegetable oil
Dough
2 cups jasmin rice
3 cups water
½ tbps salt
½ tsp turmeric
Oil for frying

    Kurdish Drum awesome! Let me know how they turn out. Just make sure that when you add them in the oil you let them be until they have fried for a while. And don’t crowd the pan or they might fall apart! Gelek sipas!

    Omg I can’t with this lovely message! THANK YOU for your kind words. These kutilks/kubbas are among the most difficult to make because of the rice dough. Jasmin rice is sticky but comes out crispy. Experiment with other short grain rices with alot of starch and see what becomes your favorite to work with.

    I love your videos they’re great, since moving out our food is what I missed the most, other than my family of course. They are still in swe and I’m in Canada and I’m born in slemani. However at first I would google and try to find Kurdish restaurants here in Toronto but there aren’t many if any so I started to cook myself and instead of calling mother every time I discovered your channel.     Do you think these kutilk were initially made in the city of Heleb? I always wondered, but then the best of these are made in the Behdînan region. Thank you for all your lovely videos!

    I wish Kurdish food was documented better and we had access to learning about our food culture and the influences our neighbours have had on our kitchen. My guess is as good as yours :) I'm thinking someone tried some type of kutilk in Heleb and travelled back to their place and recreated the kutilks. If it is just like the original or not we will never know. If it originated in Heleb or it was brought there from somewhere else we will never know. But food travels over borders and I'm thrilled this is a core part of our kitchen because it is my favorite kutilk of ALL time :D. In east Asia they make similar dumplings, but instead of making the dough from rice, they use rice flour.

Just a heads up if you do end up using jasmine rice, I also mention this in the video, but it’s super sticky to work with (use damp hands) and you have to have patience when you drop them in the oil. Do not attempt to move them around or they could break apart. Good luck and let me know how they turn out! ♥️♥️♥️

    Ri Ri thank you 🥰. It’s a bit time consuming and labor intense, but give it a try. You could make the filling and dough ahead of time and the dumplings another day. Sometimes I divide tasks so it doesn’t take me all day. Just a heads up if you do end up using jasmine rice, I also mention this in the video, but it’s super sticky to work with (use damp hands) and you have to have patience when you drop them in the oil. Do not attempt to move them around or they could break apart. Once you drop them in let them be for a few minutes before you move it around. If you use other short grain rice you won’t have the same issues. Good luck and let me know how they turn out! ♥️♥️♥️

    I just cooked now they called küba ıt was my first experince.But the dough be came to sticky l had to used oil fot shape.l think the cook way of rice l dıdnt washed it just boiled it and drained.Maybe your way to make the rıce absorb the water better.Also last time l looked different video she put patoto with rice and my küba came again sticky l dont know which way really good.

    Hi Omar! These kutilks/kubbas are very difficult to make because of the rice dough. In this recipe I used Jasmin rice. It is very sticky but it becomes crispy when you fry it. Try to use a little bit of water on your hands when you form the balls and shape them.Oil makes it difficult to get the rice to stick together after you fill it with meat. I often use Arborio rice to make this. It has alot of starch and turns into a dough easily. Experiment with different rices to find what you prefer. Some people add potatoes to the rice because it makes the dough easier to handle.
