    Do not scrape food with the edge of the Kramer. You will dull your edge or chip your knife. Use a food scoop or if you want, the top part of the knife (the spine) This particular model has the SG2 Powder steel which is very sharp and keeps an edge but can be chipped if you are not careful.

    This comparison isn't fair. You should have used a wusthof out of the box. The sharpness depends a lot on how well you sharpened it.

    @@Thedudenurse That's what you should prove. I can dull the Kramer and say that wusthof is sharper. Moreover, a comparison with Miyabi Birchwood would make more sense because they are both sg2 and in a comparable price range. Kramer is 400 and that wusthof is just 150.

    @@hemanthramineni4995 That Wusthof knife was more than $150. Further more, the point was to compare Western vs Eastern style knives...and yes one can rig a test to have a desired outcome...anyways, thanks for watching and I appreciate your comments.

    @@hemanthramineni4995 Agree, this cat neglected to sharpening the orginal joint before testing the new knife. Of course, it's going to exceed the other knife

    Very interesting. Silver stag knives also seem like a great knife. I don't have one yet but it's on my list

    Would you recommend an 8 or a 10 inch kramer? Just wondering if the handle is too heavy for the 8 inch

    I say go to like a Sur La Table and handle one and see how it feels in your hand. That is crucial!! I did just fine with the 8 inch, but I also love a 10 inch chef's knife. It changes some of the balance points and obviously gives you more surface area for cutting...but everyone will get a different feel, ya know?

    @@Thedudenurse thanks for the feedback, I live in Montréal and we have a lockdown, curfew etc. My only option will be buying the 8 and the 10, then send one of them back (a real hassle). I'm actually buying it as a gift for my wife who's a professional cook and she's using a 10 inch chef knife at work, most of the reviews on zwilling.com were recommending the 8 inch, that's why I was kind of lost in the middle. Anyhow, thanks again for your reply!

    You just gotta look around you can find them for less from verified venders. You just gotta make sure you’re getting the real thing and by less i mean like a less than 100$ variation in price

    I love the design of the Kramer knife; I love the wide blade; but, I have a serious problem where the knife's blade begins to meet the handle. What usually would be the Ricasso on this knife, instead it seems more like a ferrule. Which on close inspection on videos (will have to pick up one at a store to examine closely) there seems to be a hairline crack space between the ferrule, and the blade; which means to me a serious design flaw that permits bacteria to enter, and regardless of cleaning, will not be easy to clean out or disinfect. If that is the case, I dont care how many "experts" tell me that this is not a problem; nor, bs about how famous, talented, known, admired, revered, etcetera...etcetera...etcetera Bob Kramer is!. That ferrule if it is what I think it is, should have been welded and ground so no hairline crack space exists. If that is so; Bob Kramer as a designer is overrated and overhyped on his skills.. If I am correct; that is an overlooked design flaw that should not exist. Regardless of the knife "supposedly" being available at a "fair" price.

    the high carbon version is better, and actually has balance...the Damascus version handle is too heavy and you are only paying for the look. 100$ more for looks. good video though

    Texas Triple Tapper Bob Kramer forges his knives in Olympia, Washington. Zwilling offers a replica of a Bob Kramer which I could be made in Japan. But a Kramer knife is not made in Japan, it is made in the USofA. Thank You

    The Kramer Damascus stainless chef knife is the best on the market It is the most controllable knife, it is also offers the most precise cut of all knives. It is stiffer than any other chef's knife, so it will hold its shape during slicing and dicing operations. In my own opinion, the Kramer is too much knife for most home cooks who have limited knife skills. It costs more than a food processor that can do a better job with greater precision than a human with a knife. One example would be the Breville Souse Chef 10 cup food processor for most slicing, julienning, and chopping jobs. However: If you use a chef's knife for a living and must bring your own tools to the kitchen, this knife is the one to get. I don't consider the Kramer Damascus Stainless chef's knife, or ANY of the other Kramer Damascus stainless steel knives as being suitable for a home cook. They are a professional knife, strictly for a professional chef who buys knives to make MONEY with. This is because of the amount a set costs, is 10 times more than a complete Zwilling J.A. Henkel's pro set. One example: A commercial Robot Coupe processor with all the dicing, julienning, slicing, and processing options available, would run about the same as a single complete Bob Kramer stainless Damascus set. And the Robot Coupe will do a lot more than the knives will.

    I would have to disagree this knife would last you a lifetime 400 bucks over a lifetime ain't much.beats the heck out of buying multiple junk knives over the years

    My Masakage is better, I've only tried the Zwiling copies though not a real Kramer.
