EASY ICE CREAM WITHOUT CREAM OR BEATER
Milk - 2 cups
Sugar - 3 tbsp + 12 tbsp
Water - 3 tbsp
Hot water - 1 tbsp
Plain flour - 2 ¼ tbsp
Egg - 2
Salt - 2 pinches
Vanilla essence - 1 tsp
Red food colour - a few drops (optional)
Hi everyone, today let’s see how to make an easy and simple and delicious ice cream at home with simple ingredients..
Firstly, add 3 tablespoons of sugar and 3 tablespoons of water in a thick bottomed saucepan and place it on the stove and heat it until the sugar melts with the water and starts to bubble up and change colour to a light golden colour.
Do not wait for the colour to get deep, else the ice cream will have a burnt taste to it.
Once the sugar and water mixture starts to change colour, turn off the flame and keep mixing it for a few more mins and set it aside (this will ensure that the caramel will not burn from the heat of the pan)
Turn off the heat when the caramel starts to change colour from the sides of the saucepan and then add 1 tablespoon of boiling hot water into it and stir well.
Next, add two eggs, 2 ¼ tablespoon of plain flour, 12 tablespoons of sugar and two pinches of salt into the mixer grinder and grind everything really well into a smooth paste.
Once everything turns into a smooth and thick cream, add the caramelised mixture which is lukewarm into this mixer grinder and grind everything well again.
Make sure that the sugar caramel it’s neither too hot nor too cold.. at a cold temperature, it will start to solidify.
Add the caramel to the cream and blend again.
Next, into the same mixture, add 2 cups of milk and blend again really well and will transfer this mixture into a saucepan .
If any tiny crystals of the caramel remain at the bottom of the mixer grinder, transfer it into the saucepan too.
Next, place the saucepan on the stove and keep stirring it continuously without stopping until it starts to turn thick and creamy.
Once the mixture starts to leave the sides of the pan, it’s time to turn off the flame.
Turn off the flame and keep stirring it for another couple of minutes so that the cream doesn’t burn from the heat of the pan.
Next add a teaspoon or more of vanilla essence, according to your taste preference and give it all a good mix.
To give my ice cream a light pink colour, I am going to add a few drops of natural red food colouring. You can skip this step if you do not have red food colour.
After mixing the drops of food colour well with the mixture, transfer it again back into the mixer grinder and blend it well again yo get an overall smooth consistency.
Once the cream is blended well, transfer it into another bowl and refrigerate it overnight or for at least 8 to 9 hours.
After an overnight or after 8 to 9 hours, take it out and scoop out the ice cream and serve it.
