Mutton korma pulao
Ingredients:
For marination:
Mutton -1/2 kg
Ginger garlic paste -1&1/2 teaspoon
Yogurt -1/2 cup
Lemon juice -1tablespoon
Kashmiri chilli powder -2 heaped teaspoon ( adjust as per your taste)
Turmeric powder -1/2 teaspoon
Coriander powder -1 teaspoon
Pepper powder -1/2 teaspoon
Cumin powder -1/2 teaspoon
Garam masala -1/2 teaspoon
Salt- 1 teaspoon
Whole spices: bay leaf -1
Cardamom -3-4
Cinnamon -1 inch piece
Cloves-4-5
Pepper corn-6-8
Onion-2 medium ( thinly sliced)
Oil-1/3 cups (75 ml)
Hot water -1+1&1/2 cups
Salt-1&1/2 teaspoon ( to taste)
Lemon juice -1 tablespoon
Basmati rice -2 cups
Coriander leaves
Method:
1. Marinate the mutton with ingredients listed under marination.Keep refrigerated for 30-60 minutes
2. Wash and soak the rice for 30 minutes.
3. Heat a pressure cooker and add the oil.
4. Fry the onion until light golden.
5. Add the marinated mutton. Stir and cook for 5-8 minutes.
6. Add coriander leaves and 1 cup hot water.7. Pressure cook until the mutton is done. (6-7 whistle)
8. Once the pressure is released open the cooker and add the rice along with 1&1/2 cup hot water..water level should be 1 inch above the rice. Check salt and add as needed. Add lemon juice.
9. Pressure cook Up-to 2-3 whistle/ until the rice is done.
