Potato was definitely a key ingredient in the early traditional jajangmyeon recipes found in Korea. Potatoes only slowly disappeared from restaurant style jajangmyeon due meat prices being affordable for the working class. Any respectable homemade jajangmyeon will always have potatoes as well as some type of beef or pork in the sauce. Just thought I'd drop some knowledge!

I love how you told the difference between the different regions way to eat tofu puddings, it's just like grits in the states. Some grew up with it sweet some grew up with it savory. Jajangmyen and sweet and sour pork are Chinese Korean cuisine. They are sold by Chinese restaurants in Korea so mandarin speaking is not unusual.
