I have been making Koftay since I was 13. They never break. But a totally different recipe. I start by popping onions in the chopper, then when all shreaded, I squeeze out all the water. Put aside. In the same chopper I add meat, green chillies, garlic & ginger, spices (or kofta masala packet, as required) one egg. After all is mixed, take it out in a bowl, mix the onions and dhaniya. In the pot (I use cookig oil, finely sliced onions, when golden, I add tomatoes & spices (or kofta masala packet, as required) When masala is ready I put in plenty of water Once its fully boiling & bubbling away, I add the meat balls. I do not touch them for half an hour with any spoon, from the point its full boiling, I turn down the heat to almost half way or less. Cover & cook till water evaporates. Then I start bhoonaayee for twenty plus minutes on medium, stirring often to make sure they dont burn, or even sprinkle water, if you needto sprinkle water that means heat is too high. You should have slow enough heat to bhoonofy it. Once all is bhoonofied, I add boiled water from the hot kettle to the desired shorba needed, boil on full, once bubbling, turn it down to medium or lower & let it cook on dumm till you can see it has all come together. Turn off heat, add garam masala & dhaniya. I also boil eggs & add them on top when serving.
