The elephant logo is that of Thiers Issard, there should be four stars on the blade also unless they've rubbed off. Amazing knives and probably the best manufacturer of Sabatier knives. These are fairly uncommon and the carbon steel versions even more so, you have a lucky friend! Great set of videos by the way.
