Whoever put the caption up at the end of the video that said this man is a genius certainly was not one himself. 100 grit sandpaper is more than sufficient to re-profile a knife. I do not know if enough heat is generated to destroy the temper of the knife but it is certainly a concern. If this method does nothing else, it will certainly destroy the edge on the pair of scissors used to cut the sandpaper. I have a feeling you would be better off taking the knife to Ace and paying them to sharpen it.
