Kithul Tree is a native flowering palm that grows naturally in the Sri Lankan tropical rain forest. It is scientifically known as Caryota urens. Kithul treacle is made from the sweet fluid (sap) extracted from the kithul flower when it is the right time for tapping and reducing the sap. Collected sap is gradually evaporated with the help of wood fire to produce a pure, unrefined and delicious kithul treacle. This process ads up a unique smoky taste in to the treacle. Whole process is done by traditional kithul tapping families who has the much-guarded secret knowledge passed on to them over generations.
Kitul Treacle or “Kithul Pani” is temptingly smooth, scintillating and delicious syrupy delight which is a unique traditional product of Sri Lanka. This natural sweetener syrup (“Kithul Pani”) has been a favourite among Sri Lankans for hundreds of years. It is commonly used to make all kind of Sri Lankan traditional sweets and also to mix with buffalo curd. Kitul Treacle is a 100% natural product which has loads of health benefits. It is suffused with antioxidants and rich in minerals. Also known to have very low glycaemic index, hence Kitul Treacle has identified as one of the most diabetic friendly natural sweeteners in the world. At present day Kitul Treacle is used as alternative to Maple syrup and a sugar replacement.

There are many Kithul palm trees in Malaysia along the highways and even in urban areas, but I have not seen sap being collected. First time, I had gained this knowledge. It really amazed me. Honey or rather call it treacle being made by boiling the sap. You are so simple but very knowledgeable. The sweet and savoury ' appams' are so appetising. Your house deep inside the plantations with kerosene lamps at night, gives me a feeling of calmness and peace. My heart reaches out to you and children with love and blessings, wishing you and your family good health, longevity, wealth and happiness. May God bless you and family. All the best. 😍💕💕💕🙏

@@mimikolandai8527 Yes, there are these Kithul Palms in Malaysia. I have not seen sap being collected. There are more like ornamental plants, along the highways and also along streets in urban areas.
I learn something new every time I look at your videos. I have to do some research sometimes about plants, herbs and fruits used in your cooking. Sri Lanka is truly a beautiful place. I agree with a fellow fan here, a documentary is needed. I enjoyed this episode with you and your children. I enjoyed looking at how the sap from a tree was made into honey and how you incorporated it into your cooking. Stay blessed, your fan from Trinidad and Tobago 🇹🇹

Good morning Anoma! I've never seen honey made from the Kithul tree. it looks sweet and delicious. Since it came from the Kithul flower, does it have any floral notes in its taste?
