Kinigtot is an Ilocano's version of Pinapaitan. Kinigtot means "ginulat" in Filipino and "surprised" in English. It is named "Kinigtot" because it is cooked in a high flame and a very short time. It is actually one of the famous "pulutan" in the Philippines.
Through the years and depending on location, some version on how to cook Kinigtot varies.
Now I will cook my own version of Kinigtot.🙂
