Ive cooked a couple of few hundred corned beefs, I always add Bay Leaves, but I am not sure what they do either. Mum just did that. Never done it above water, I will give it a go.

That's the thing with bay leaves. U never really knw what they do, untill you DNT use them, and ur like ahhh I shoulda added bay leaves 😂😂

I made this for dinner tonight. I had no idea that I was such a good cook lol. Always enjoyed corned beef done in a slow cooker but this is going to be how I cook it from now on. A couple of hours in the camp oven v all day in the slow cooker and it's sensational. Thanks Ron, always enjoy your videos

I finally got around to cooking it on the weekend and it was a massive success and ours like yours was moist where I saw someone else using your recipe but it was dry as. I really enjoyed the way it all turned out even though I had to improvise the trivet as I have not done it before and I think I could have done with a bigger camp oven because once I lifted it then I was pretty close so I will have to see you about one and I think I need one of your lid tools as well Cheers Garry @@campovenking

Nicely done mate. I reckon the measure of a well cooked corned beef is the next day - Is it tough or tender? I was only ever taught the boil/simmer for 3 hours or more method. Yours looks juicy enough that it shouldn't be tough. Definitely gonna try.

Its never tough unless you under cook it. Use a skewer to test and cook it until the skewer pierces with absolutely no resistance. If it feels tight in anyway and your not sure, justlet it cook for another half an hour and test again.

Yeah steam is just steam but the flavours heat up and permeate inbto the meat as well. Good question 👍

Did one yesterday for Mothers Day, turned out bloody beautiful although using HeatBeads didn’t get enough heat to caramelise the top but that didn’t matter. Only downside was the vinegar took off all the seasoning on my 14” Meters so back to reseasoning today. 👍.

yeah thge vinegar can be harsh on seasoning. It doesnt pay to leave it in there withot rinsing.

@@campovenking yeah I emptied not long after cooking but didn’t rinse it out until the evening, (was used for lunch). We live and learn. 😃. Do you reckon say a mix of water and dry ginger ale or something like that would do the same job or is there something specific to the vinegar?

@@rogertrimper3093 yeah step one, make sure your oven has a healthy amount of seasoning. Rinse as soon as your finished. You wont have a problem. I have left it over night and you can see the change in the seasoning at the water line. I ended up using my big cast aluminium ovens when i was catering for doing lumps up to ten kilos each. I didnt have to worry about it then :)

Yeah mate. You've got to rinse them straight away or it will eat into the seasoning for sure. Thanks for mentioning that.

Looks bloody nice Excuse my ignorance but the only “Corned Beef “ I see in the shops is sealed in a bag ? Can you buy that cut of meat as you have presented it somewhere in a shop Cheers

Yes you can. I buy it from real buthcer shops and I get them to cryovac itr for me if need be. I can get them to cut what ever size I want. I have had it cut in ten kilo lumps a few times actually.

haha, its just a marinade, it dissolves and caramalises witht he fat and doesnt taste sweet at all.

No it has coals under as well to keep the liquid on a rolling boil.
