Maimoona Yasmeen Recipes - Hyderabadi Khichdi is mostly served at breakfast as a full meal with Hyderabadi Kheema and Khatta or tomato chutney, pickles, papad and pure ghee.

For 5 to 6 servings.
Rice - 8 Cups
Red Lentils - 1 ½ Cup
Cooking Oil - 3 Tablespoons
Chopped Onion - 1
Caraway Seeds (Shahzeera) - ½ Teaspoon
Cinnamon - 2 Small Sticks
Cloves - 2
Ginger Garlic Paste - ½ Teaspoon
Turmeric Powder - 1 Teaspoon
Salt - 3 Teaspoons
Chopped Coriander - ½ Bunch
Whole Green Chillies - 4-5
Mint Leaves - ½ Bunch
Procedure:
1.In a cooking saucepan, add cooking oil.
2.Add chopped onion. Stir and add caraway seeds or shahzeera, add cinnamon and cloves.
3.Add ginger garlic paste, turmeric powder, salt, and 5 big glasses of water(2.5 litres).
4.Add chopped coriander, whole green chillies and close the lid.
5.When water comes to boil, add the mixture of rice and red lentils that is washed thoroughly and close the lid.
6.Keep stirring in between. Let it cook on high flame till the water gets dry and then simmer for 5 minutes.
Hyderabadi Khichri is ready.

what stupidity! I like your recipe but why you deceive people by not giving exact details. 1.mention rice interns of kg or grams for god sake 2.mention masoor ki dal in terms of grams like 50 grams or 100 grams etc 3.mention onions in terms of dallies like 1 pyas ki dalli or 2 pyas ki dalli etc 4. without forgetting throught your life from now onwards mention flame ie while frying onions it should be low or mediums or high? 4.mention water quantity in terms of litres like 1 litr or 500 ml etc never mention water in terms of cups or jars or jugs. or glasses because you see what cup size you have we may not have it and where should we search to get exact glass or cup size you have. 5.also again don't mention dahi in terms of cups I know it is not there in this video but in your other videos I saw it.only mention dahi in terms of kg ie half kg or 1 kg or 250 grams. mention quantity of ingredients as we buy them from markets otherwise adapt taste will not come.then what is the use of making videos if can't teach with exact details?

Assalam alaikum, I take rice and water in the ratio 1: 2.5, ie if you are taking 1 cup rice, take 2.5 cups of water.

It is due to excess water. Also when the water is quite dry, do not stir. Close the lid, cook on medium to high flame till the steam starts emerging out of the lid and then simmer till the rice is fully cooked. Stirring during the steaming process will cause the rice grains to break and get mushy or very soft.

@@Hyderabadwala JazaakhAllahu Khairan for immediate reply. I usually take 1cup rice n 2 cups water as my Mum in law taught. But still I end up with gullati. I've also recently changed from aluminium utensils to steel cookware, May be this could be the reason....

It depends upon rice too and the texture one needs. Like some people prefer soft while some others prefer grainy. You can try with lesser water even. Once you get an understanding of the rice you are using, you will learn to adjust water. Even I have switched to steel utensils but it is difficult for rice only because it might get burnt if the flame is not switched off in accurate time.

+mohammed yawar Yes, you can try toor dal but toor dal needs to be semi tenderized before adding rice as toor dal requires more cooking time than rice.

Hasan Tayeeb Wskm, Mr Hasan. Sorry for responding late. Here I used 8 cups of Rice that amounts to 1 kg approximately and I used 1 1/2 cups of red lentils that will measure 150 grams. If you are using Basmati Rice, soak for 30 minutes otherwise no need to soak Rice or lentils. Also I used 5 big glasses of water here that will amount to 2.5 litres. I dunno y " Everytime" i make this khichdi..it sticks to the cooking vessel n burns away. Hence I add more rice- & masoor dal .. so that we can leave burned part n eat d khichdi above.. never tried using non stick! Let me try n see!!

terrible instructions for water/rice measurement. when cooking rice via absorption method, you ALWAYS measure both the water and rice using the SAME utensil to measure correctly.
