My mom doesn't throw away the peeled part (kosh). She mixes it with minced meat and tomatoes and cooks it like a keema. Try it. Tomatoes cut down its bitterness and the blend is delicious.

No matter how much tomatoes you add it will have bitterness, still thanks for the suggestion.

@@kashmirfoodfusion indeed it only slightly cut downs the bitterness but the slight bitterness and the tanginess of the tomatoes make a good blend alongside the minced mutton. Do try. It's exactly how you would make keema but with a twist

Brother, I myself wasn't fond of eating bitter gourd because of it's taste but what's interesting about this recipe is that the bitterness isn't felt at all. I would suggest you to try it once, you'll be surprised for sure.
