    300 gm (maida/)bleached refined white flour/all purpose flour 1tsp salt 1 tsp baking soda 2tbsp water ( first) combine the ingredients and make them form crumbs then add melted ghee ( clarified butter) or Vanaspati ( dalda) ghee can be made by boiling churned cream for about 30 mins. mix well add 2tpsp more water knead the dough (10mins) form small balls out of it let them rest for 1 minute and flatten them as shown in the video bake in an oven on convection mode for 34 mins in the lower rack and then transfer them into the upper rack for 1 minute You can garnish them with poppy/ seasme seeds

    I did everything according to your instructions but they got burnt and came out really soft. They broke as I touched them. Where do you think I’m going wrong? 😣

    @@Alqadeer12 when they're just out of the oven they tend to be soft, not just these kulchas almost all cookies come out soft when fresh out of the oven, don't touch them when they're just out of the oven also, try to bake them at a slightly lower temperature Hope this helps you May Allah bless you

    Thanks for your recipe. I tried this kulcha recipe and turned out very good.But were little bit too salty. I think we should use less than 1 teaspoon of salt in this recipe.looking forward to your new kashmiri recipes.

    @@KashmiriZaika i baked these at 180c in coventional oven for 30mins,and added half as salt and soda as mentioned in recipe.220 is too high temperature.

    Thank you so much for teaching us how to make kulchas. Unfortunately, like some others who have commented, mine were also overdone. I took them out as I saw that they were getting too dark, but I was still too late and the edges were dark brown. The taste was also slightly soapy, which is a sign of too much baking soda. The texture was excellent, but next time I'll reduce the cooking time and use 1/2 tsp soda. I guess everyone's ovens work slightly differently.

    If you have convection microwave oven then yes, bake it on 220 c. However if you have simple microwave, then no.

    gows shah Dear yes you can use wheat flour but result will not come out same ,as Maida (all purpose flour )contains lot of Gluten , while wheat flour is dense ,but you can substitute it by 50% of the wheat flour for all purpose flour .     Asalamualikum, I tryed this recipe wow it came out owesum more than my expectation I want to make them again and again but the problem is that on the very next day they became soft ,don’t know why plz plz plz reply .

    please keep them in air tight container when they are completely cold after taking out from oven. this way they will never turn soft next day.. may be you are in some moist or humid environment.     Ambreen Shah in measuring cups 1 cup is 250 grm so you have to take 1 cup and 1/4 cup of flour, one teaspoon of salt , 1/2 teaspoon of baking soda , n ghee 2/3 cup water 4 tablespoons spoons. For any enquiry you can DM me on my Instagram: kashmiri zaika

    Hayah Farooq you can bake them on baking mode 180 degrees same way if you are having otg .
